Modern Malaysian Cuisine Reimagined at ATAS, The RuMa Hotel Kuala Lumpur

 In the heart of Kuala Lumpur’s bustling cityscape lies ATAS, a modern dining destination tucked within the sophisticated The RuMa Hotel and Residences. At ATAS, local Malaysian heritage is honoured with a contemporary twist—each dish carefully crafted to evoke nostalgia while appealing to the modern palate.

Leading the charge is a beautifully executed Udang Galah Otak-Otak—plump river prawns paired with mackerel mousse, encased in betel leaf, enriched with coconut milk and kaffir lime leaf, then finished with delicate pearls of salmon roe. It’s a luxurious interpretation of a familiar street-side favourite.

Next comes the Ayam Bakar Percik, featuring tender organic chicken grilled to smoky perfection, marinated in a robust blend of tamarind, lemongrass, coconut milk, garlic, and chilli—a flavour-packed tribute to East Coast classics.

Equally rooted in tradition is the Botok-Botok Barramundi, a rarely-seen heritage dish. Here, fresh barramundi is generously marinated in a spice paste of curry powder, galangal, turmeric, and ginger, layered with ulam leaves and toasted coconut, and steamed inside a banana leaf parcel. It’s earthy, herbaceous, and utterly soulful.

For a humble yet flavourful side, the Nam Yu Snake Bean stands out—long beans stir-fried with fermented red bean curd, garlic, and onions, offering bold umami and a satisfying crunch.

At ATAS, diners can expect an elevated culinary journey through Malaysia’s rich food heritage. With its thoughtful execution and luxurious ambiance, it’s a must-visit for lovers of refined local cuisine.
