Honouring Four Decades of Cantonese Culinary Excellence: Shang Palace Unveils Its Legendary Menu

This year, Shangri-La Kuala Lumpur celebrates its 40th anniversary this year and we are glad to be invited to savour at Shang Palace restaurant. This time, Shang Palace, marks the occasion with a special tribute: the unveiling of a Legendary Menu that reflects four decades of culinary artistry, cultural heritage, and timeless hospitality.

Since opening its doors in 1985, Shang Palace has served as a beacon of Cantonese cuisine in Malaysia’s capital. Revered for its elegance, finesse, and authenticity, the restaurant has long been a favourite among dignitaries, loyal guests, and food connoisseurs alike.  To commemorate this milestone, Executive Chinese Chef Keith Yeap, who brings with him over 26 years of culinary mastery, presents a thoughtfully curated menu steeped in nostalgia yet enriched with contemporary refinement. 

A Taste of Time: Culinary Stories Through Signature Dishes

The Legendary Menu is structured around evocative chapters, each dish reflecting a key moment in Shang Palace’s culinary evolution.

‘Ma Lai Go’ Chinese Steamed Cake

Among the highlights is the beloved ‘Ma Lai Go’ Chinese Steamed Cake, or Malay Cake. Once a humble dessert found in dim sum trolleys across the region, this tender sponge cake is recreated with rice flour and coconut milk, offering a delicate, almost cloud-like texture. Lightly sweet and rich with nostalgia, it stirs memories of childhood teatimes and Cantonese family gatherings.

Peony Blossom Pastries

Another masterpiece is the Peony Blossom Pastries, named for the elegant flower that symbolises prosperity and honour. With crisp, golden layers wrapped around a soft lotus paste centre, these pastries are a feast for the senses. Artful and aromatic, they offer more than taste—they bring a visual and emotional connection to age-old culinary rituals.

Shunde-style Shredded Fish Broth 

Equally notable is the Shunde-style Shredded Fish Broth, a dish that pays homage to the southern Chinese province of Guangdong, known for its delicate soups. Featuring the prized soon hock fish, shredded by hand and simmered with tender luffa gourd, enoki mushrooms, and aged tangerine peel, the result is a broth that is light yet full of depth—a soothing, elegant expression of Cantonese simplicity.

Kirin-style Steamed Grouper 

For seafood lovers, the Kirin-style Steamed Grouper is a showcase of restraint and skill. Steamed just until the fish reaches a velvety texture, it’s enhanced with subtle hints of ginger, spring onion, and a medley of mushrooms and carrots. The dish speaks of purity and balance, a hallmark of Cantonese culinary philosophy.

Braised Lion’s Head Meatballs with Crab Roe in Yellow Sauce 

The Braised Lion’s Head Meatballs with Crab Roe in Yellow Sauce is one such offering. A reinterpretation of a classic, the dish features meatballs made from a blend of minced chicken and prawn paste, slow-braised in a velvety pumpkin broth infused with luxurious crab roe. Accented with goji berries and tobiko, the result is a dish that is rich, nourishing, and undeniably indulgent.

Lotus-Wrapped Steamed Beef Cake

Another standout is the Lotus-Wrapped Steamed Beef Cake, a humble yet flavourful creation. Minced beef is combined with choi sum, shimeji mushrooms, and crunchy water chestnuts, wrapped in aromatic lotus leaves, and gently steamed. The result is moist, fragrant, and layered with earthy undertones—a comforting classic reinvented with finesse.

Available for both lunch and dinner from 24 April 2025, Shang Palace’s Legendary Menu is more than a commemorative collection—it is a celebration of history, heritage, and heartfelt hospitality. With dishes starting from RM28 nett, it invites diners new and old to rediscover the artistry and warmth that have defined the restaurant for 40 years.

“This menu represents the soul of Shang Palace,” adds Chef Keith. “It honours the dishes our guests fell in love with over the decades, and reflects our continuous dedication to craftsmanship and hospitality.”
