From Kobe to KL: Enishi’s Noodle Mastery Unveiled

 Originally from Kobe, Japan, Enishi is no stranger to accolades—it was once listed in the Bib Gourmand category of the Michelin Guide. Now nestled in Malaysia, Enishi continues to bring that same level of passion and precision to every dish. Known for its bold noodle offerings and soulful Japanese-Chinese fusion creations, Enishi is a haven for noodle lovers seeking both comfort and creativity on the plate.

During our recent visit, we were greeted with a warm, minimalistic setting and an exciting menu brimming with handcrafted noodles, robust broths, and thoughtfully composed side dishes. Each bowl served not only fed the appetite but told a story of heritage, technique, and innovation.

To begin, Enishi’s dumplings are a delectable treat—plump, juicy, and masterfully crafted. Guests can choose between the original and spicy versions, both of which impress with their tender skin and flavourful fillings. Whether you’re craving something mild or with a fiery kick, these dumplings are a satisfying start to your meal.

Chicken Karaage: Crispy Meets Juicy

Next came the Chicken Karaage, offered with a selection of original, tartar, or spicy sauce. Each piece is golden-brown and perfectly crisp on the outside while remaining incredibly juicy within. The trio of sauces allows diners to tailor their experience—ranging from creamy indulgence to bold heat—making this a crowd-pleasing staple.

Signature Dan Dan Noodles

A highlight of the menu, Dan Dan Noodles are where Enishi truly shines. Diners can select their spice level: Zero, Medium, Very Hot, or Curry. This visit featured the Medium version—a harmonious balance of heat and umami. The noodles, made in-house, are springy and delicate, yet robust enough to carry the rich sauce. The toppings elevate the dish: seasoned minced meat, fragrant chashu, tender duck slices, crunchy cashew nuts, and crisp fried onions. Stirring from the bottom releases an aromatic burst of layered textures and flavours, accented by fresh sweet onions. Every bite offers a rich, satisfying mouthfeel—spicy, savoury, and deeply comforting.

Shoyu Ramen

We also tried the Shoyu Ramen, which impressed with its generous portion and well-balanced broth. The soy-based soup was rich and deep in flavour without being overwhelming. The noodles, once again, were cooked to perfection—springy and smooth—making every slurp a moment of joy. It’s a dish that feels like a warm hug on a rainy day.

Yuzu Shio Ramen

The Yuzu Shio Ramen offered a lighter, more delicate experience. The clear broth carried a subtle citrusy note from the yuzu, refreshing the palate and pairing beautifully with the chewy noodles. This dish is ideal for those who appreciate refined flavours and a touch of brightness in their ramen bowl.

Dan Dan Mazesoba

Another standout was the Dan Dan Mazesoba, a dry noodle dish served with a generous medley of fresh vegetables and minced meat, artfully arranged. The addition of shibazuke (lightly pickled vegetables) and cashew nuts gave the dish a wonderful crunch and tang. Mixing everything together created a bold, hearty “mess” of flavours, making this a playful yet delicious experience that’s as much about texture as it is about taste.
