Hyatt Regency Tsim Sha Tsui – Sip on Entirely Islay Whiskies at Chin Chin Bar

Islay, a southern island in Scotland, is well-known for producing intensely flavoured whiskies.  From February to April, Chin Chin Bar, one of Hong Kong’s Best Whisky Bars as selected by 2018 RBHK Best Spirits Awards, is proud to present two bespoke cocktails as well as a flight featuring whiskies from Kilchoman, the only Scottish distillery with single malt produced entirely in Islay from barley to bottle.

Be captivated by Hazy, a cocktail created by our mixologists.  Composed with the rich and sweet Kilchoman Machir Bay, its tropical fruit and honey notes harmonise with the sweet and tangy Korean yuzu tea added to the cocktail.  Fresh mint leaves are skilfully used to rim the glass before being served and you can almost feel the coastal sea breezes of Islay when enjoying a Hazy.  As the name suggests, this drink is intended to bring a mixture of flavours and it may take you more than one sip to discover all its flavours.

Another irresistibly unique homemade cocktail, Pioneer, is made from Kilchoman Sanaig.  Inspired by the red cherry and over-ripe plum flavours in the liquor, our mixologists decided to get creative by adding not only homemade plum syrup and juice, but also salted dried plum.  Mixing both Western and Chinese plums together makes the cocktail one-of-a-kind, and the ultimate choice especially for novelty-seeking patrons.

True whisky aficionados may savour the Kilchoman Whisky Flight which consists of three whiskies, starting with Loch Gorm 2018 Edition which features heavy sherry notes and mouth-filling peat smoke; Port Cask Matured 2018 Edition that offers flavours of redcurrant jam and cinnamon with layers of citrus on the palate; and 100% Islay 8th Edition, known for being well-balanced with a long clean finish.

Kilchoman Whisky Flight – HK$395 per set, 30 ml per glass

To challenge your tastebuds while enjoying the whisky flight, an interactive “blind tasting” game will be available in February.  Patrons will be asked by our mixologists to guess the names of the whiskies, and upon matching all three correctly, a complimentary cheese platter or a selected homemade dessert will be offered.  Limited quantities while supplies last.  Don’t miss out on this whisky quest!

Located on Level 3 of Hyatt Regency Hong Kong, Tsim Sha Tsui, Chin Chin Bar is a comfortable, cosy lounge bar with Chinese style décor and an outdoor terrace, offering a wide array of whiskies, wines, spirits, liquors, classic cocktails as well as cigars for guests’ pleasure. Live music is available nightly.
