Live Presentation and Tasting session with Chef Jeff Ramsey of Babe

The CUBE_1 KL in Isetan The Japan Store had recently had a successful event which is the  ‘Live Presentation and Tasting session’ of Jeff Ramsey, the head chef at Babe Restaurant.
For those who are not aware, Babe is one of the popular restaurant located in Damansara Heights where they serves “Japas” which is known as Modern Japanese Tapas.
Chef Jeff Ramsey’s is the Michelin Star Chef where he had an experience culinary experience that lead him to his success story today.

 

About Chef Jeff Ramsey
Studied the art of sushi in Japan back in 1998, he had then being offered to lead the opening of the Tapas Molecular Bar of the 6-star Mandarin Oriental Hotel in Tokyo (2005). In 2006, he took the title of Seven Sushi Samurai’s Sushi of the Year Award. And 2008, he earned his first Michelin Star. He had finally opened his own restaurant, “Babe” at Damansara Heights, Kuala Lumpur, serving “fun dining” Japas cuisine in 2016.
And during the whole event, Chef Jeff Ramsey will be preparing the food menu using Marukome which is the Japanese Miso Paste.
“Caesar Salad” Semi Frozen Salad Capsule
We started with the uniquely prepared salad. Not those green leaves on big bowl but he had made the salad in capsule form!. Using the frozen  toasted Brioche, Chef Jeff Ramsey injected the taste of Caesar Salad in it and  this really melts in  your mouth and the taste is simply refreshing. Complements with the salad, Chef Ramsey made the coconut bacon. The delicious crunchy bites of coconut bacon where he roasted the raw coconut glesh with soy sauce, onion powder, and paprika. The taste is just awesome and divinely good.
Sashimi Spring Roll by Jeff Ramsey
Beautiful and inspiring meal. The cubes of sashimi where there is cubes of tuna, and salmon wrapped with the crunchy spiring roll. It is sinfully good and addictive.And I am totally in love with the fatty tuna belly and the shoyu Koji Jelly which is added to it making the dish more delicious and have the umami taste of it.
Miso Butter Clam Chowder
Another delicious smooth soup where they use the warm potato mousse, onion jam, and ankake dashi. Using the Ekisimo which is the miso paste in liquid form, one can enjoy the creamy blend of soup without MSG. The clam chowder is such a tummy warming dish especially during a cold day.
Babe-n-Dazs
Ends our meal with the delicious ice cream sandwich which is with V.S.O.P., foie gras, and aged mirin. The unique flavours of the ice cream is just a great one to end our whole meal of the day.

For those who purchase the event entrance ticket, you will be receiving the  coupon for a FREE sake tasting of their choice. A variety of sake from different places in Japan are available and the price is competitive. I am going to buy more.

 

If you are not a big fans of alcohol, go for Amazake which is one of the popular items in Japan as well. Produced by the company called Marukome which is one of the the largest Miso supplier in Japan. Having to supply fermented food to its customer for more than 150 year, Marukome always in the search for new methods to enhanced Japanese Cuisine.
Amazake is one of the popular item where it is a traditional sweet, low- or non-alcohol (depending on recipes) Japanese drink made from fermented rice. It is part of the family of traditional Japanese foods made using koji and the koji mold that includes miso, soy sauce, and sake. Asides, Amazake is believed to be very nutritious. It contains Vitamin B1, B2, B6, Folic acid, Dietary fiber, Oligosaccharide, Cysteine, Arginine and Glutamine. It is often considered a hangover cure in Japan. And now they have few types of Amazake available such as the Long Life Pack, Soymilk Blended Long Life Pack, “Yuzu” Blended Long Life Pack, Ginger Flavoured Long Life Pack, Apple Flavored Long Life Pack and the Family Size Long Life Pack.
Love to go home and experience the sauce with some home cooking, you can buy home their Ekimiso,Shoyu-koji or even the Home Cooked Instant Miso Soup and Miso Paste.
