Tosca Ups the Culinary Ante with Michelin Three-Star Guest Chef Paolo Casagrande

From November 2 to 4, the glitzy Michelin stars will be tearing through the sky at Tosca at 420 meters above sea level as a three-day-only guest chef invitation has been extended to culinary maestro Paolo Casagrande from the recently crowned Michelin three-star Lasarte Restaurant in Barcelona.

The culinary roots of Italian-born Chef Casagrande can be traced back to his childhood when he spent time with his mother and grandmother in the kitchen. At the age of 14, he attended the Alfredo Beltrame Hospitality School in the Veneto region of Italy. Chef Casagrande moved up his career ladder perfecting his impeccable crafts through training in his native Italy, London and Paris, before meeting his mentor and professional father, Martin Berasategui, in 2003.

Working with Berasategui, the standard-bearer in the Spanish culinary world, opened up a new door to avant-garde cuisine and gastronomic vision for Chef Casagrande. Chef Casagrande’s commitment and depth of talents, displayed during his time at Martin Berasategui Restaurant in Gipuzkoa, won him an invaluable opportunity to helm the kitchen in M.B, another Berasategui dining establishment at The Ritz-Carlton, Abama in the Canary Islands, where he garnered the first Michelin star for the restaurant. Rejoining Berasategui in Lasarte Restaurant in 2016 marked another distinguished page in Chef Casagrande’s culinary journey as the highly acclaimed restaurant was bestowed three Michelin stars in 2017.

During his time at Tosca, Chef Casagrande will showcase a medley of Basque- and Catalan-inspired delicacies fused with Italian staples, to the delight of all avid gourmands. “My dishes vary according to what nature and seasons offer us. It’s just in time for white truffle and I’m excited to convey every aroma of this gastronomic gem to engage the palates at Tosca,” said Chef Casagrande. Priced at HK$2,480 for eight courses, the dinner menus offer indescribable sensations of Chef Casagrande’s innovative classics. Lunch menus from HK$888 are perfect for guests looking for a midday indulgence. Dishes of special note include “Amadai Fish with Iodized Sauce, King Crab, Raw Tomatoes and Saffron,” “Sea Urchins and White Truffle Risotto, Espelette Pepper and Cockles,” and “Almond and Salted Praline, Apricot and Rum Ice Cream.”
