OZONE BRINGS THE FLAVORS OF ARGENTINA FROM FARM TO TABLE

October 10, 2015 by StrawberrY Gal

Argentine cuisine conjures up images of natural grasslands (The Pampas) and enticing grilled meats from the herds of sheep and cattle grazing thereon. Argentine master chef Sergio Mercado will team up with Ozone, to bring a wild burst of flavors from The Pampas to the altitude of 490 meters above sea level. Available for a limited period from October 29 to November 4, 2015, the specially crafted menu is bound to be a heavenly feast for meat lovers and gastronomic adventurers alike.

The influence of European immigrants upon Argentine cuisine, commonly referred to as a cultural blend of Italian, Spanish, British, German and Indian cooking traditions, is extensive yet somewhat subtle. Argentina’s diverse climate, covering some seven geographic regions, as well as its fertile soils, blessed the country with an abundance of agricultural and livestock products. Chef Sergio Mercado, a native Argentine spent his childhood in the beautiful grasslands and rivers, is passionate about using local produce in his culinary creations, presenting Argentine cuisine in its purest form. In 2012, he became Executive Chef of Hotel Correntoso Lake and River at the young age of 30, overseeing the operation of two celebrated restaurants.

A scrumptious selection of Argentine delicacies including the traditional sweet corn dumpling Humita, Spanish-inspired meat pie Empanada, tender and delicately flavored sweetbread Mollejas, the acclaimed national dish Locro Stew, barbecued Chimichurri Beef, Matambre pork roulade stuffed with refreshing tomato marmalade, grilled lamb rack Cordeiro, alongside a delightful array of desserts are available to tempt epicures. Locro Stew is a traditional dish served on May 25 every year to commemorate the May Revolution which marked the beginning of the Argentine War of Independence. The rich and flavorful stew is made with pumpkin, white corn, beans, beef and pork. To welcome the autumn chill in the air of Hong Kong, Chef Sergio spices up the dish with scallion oil and red pepper, making it a heart-warming favorite for the season. Asado literally means barbecue and is considered the very definition of Argentine cuisine. The Chimichurri Beef Asado delivers the meaty pleasure of succulent roasted beef. Served with chimichurri sauce, a blend of parsley, garlic, oregano, paprika, red pepper oil and vinegar, the beef asado is sure to satisfy any barbecue craving. The moist and creamy Bread Pudding is characterized by the mellow flavors of milk and vanilla, and is topped with a drizzle of caramelized milk to pamper the sweet tooth. Alfajor is one of the most beloved confections in Argentina with a history dating back to the 16th century. The buttery shortbread cookies are sandwiched with caramelized milk, offering a true indulgence for dessert aficionados. Special selection of Argentine wines is also available. For full menu, please refer to the appendix.
