 Within the highly saturated luxury dining segment of the capital city, the traditional omakase format has often leaned heavily toward strict, historical replication. However, true culinary innovation demands a willingness to intersect distinct cultural frameworks without disrupting ingredient integrity. Operating from its sleek, modern enclave within the Shoppes at Four Seasons Place, Nobu Kuala Lumpur successfully achieves this standard with its newly debuted Sushi Omakase program. Priced at RM600++ per person, the multi-course progression—comprising dual appetizers, a targeted cold course, structural hot elements, a dessert, and nine individually structured pieces of Nigiri—serves as a technical masterclass in contemporary Japanese-Peruvian gastronomy.

In Kuala Lumpur’s increasingly competitive luxury dining landscape, omakase experiences have become a familiar benchmark of refinement. Yet while many restaurants remain rooted in strict interpretations of Japanese tradition, Nobu Kuala Lumpur continues to carve out its own identity by embracing the Japanese-Peruvian philosophy that has defined the brand globally.

Its newly introduced Sushi Omakase, priced at RM600++ per person, offers a carefully structured multi-course experience that blends technical precision with Nobu’s signature approach to contemporary fusion.

Presented at the restaurant’s sleek setting within The Shoppes at Four Seasons Place, the menu brings together two appetizers, a cold dish, hot components, dessert and nine individually prepared nigiri courses, forming a progression that moves deliberately between acidity, richness, texture and temperature.

A Bright, Clean Opening

The meal begins on a fresh and vibrant note with dishes designed to awaken the palate.

The Oyster Tiradito introduces the sharp, citrus-driven character closely associated with Nobu’s Peruvian influence, while the Kampachi with Jalapeño Dressing delivers a similarly clean profile, balancing the natural richness of the fish with gentle heat and bright acidity.

Together, these opening courses establish a sense of lightness before the menu progresses towards more complex and indulgent flavours.

Crisp Rice, Snow Crab and Aji Amarillo

One of the more distinctive creations arrives in the form of Crisp Rice with Snow Crab, Aji Amarillo Aioli and Caviar. The success of the dish lies in the contrast of textures. The crisp exterior of the rice provides a firm, crunchy base, while the snow crab brings sweetness and delicacy.

Aji amarillo, a Peruvian yellow chilli known for its fruity warmth, adds a subtle layer of heat, while the caviar contributes salinity and depth.

It is a dish that neatly captures Nobu’s broader philosophy — Japanese technique meeting Peruvian flavour without overwhelming the quality of the underlying ingredients.

Nigiri as the Core of the Experience

The nigiri sequence forms the heart of the omakase.

Rather than treating each piece as an isolated course, the progression is structured around changing levels of richness and intensity.

A lighter Ika with Ponzu introduces a clean and slightly citrusy profile before the menu moves into fattier cuts of tuna.

The Chutoro with Wasabi Salsa brings together the buttery texture of medium-fatty tuna with a sharper, more contemporary condiment, while the Otoro with Tosa Shoyu leans closer to traditional Japanese flavouring. The use of Tosa shoyu — typically more aromatic and layered than standard soy sauce — complements the richness of the fatty tuna without overpowering it.

Where Land and Sea Meet

The omakase moves beyond seafood with the inclusion of torched Wagyu sushi finished with dry miso.

The beef’s marbling and richness are intensified by searing, while the dry miso contributes concentrated umami and a slightly savoury-sweet edge.

It is one of the clearest examples of Nobu’s willingness to bend traditional sushi conventions while still respecting balance and proportion.

Another standout is the Hand Roll of New Style Mixed Tuna with Uni, combining seasoned tuna with the creamy, briny richness of sea urchin.

The result is an indulgent final stage to the sushi progression, bringing together some of the menu’s most luxurious ingredients in a compact and texturally layered form.

A Warm and Restorative Finish

After the richness of the nigiri sequence, the Hot Somen Soup provides a gentler transition toward the end of the meal.

Light noodles and warm broth offer a restorative pause, softening the intensity of the preceding courses and bringing the savoury portion of the omakase to a comfortable close.

Dessert takes a more playful direction with the Miso Cappuccino, a sweet interpretation that uses miso to introduce a subtle savoury undertone.

Rather than ending with straightforward sweetness, the dessert reinforces the meal’s recurring theme of contrast.

A Contemporary Interpretation of Omakase

What makes Nobu Kuala Lumpur’s Sushi Omakase interesting is not simply the quality of the ingredients, but the way the menu moves between Japanese discipline and Peruvian expression.

Acidity, spice, salinity and richness are used strategically, while texture plays an equally important role – from crisp rice and delicate crab to fatty tuna, torched Wagyu and creamy uni. At RM600++ per person, the experience sits firmly within Kuala Lumpur’s luxury dining category. However, it offers something distinct from more orthodox omakase counters.

Rather than pursuing historical purity, Nobu focuses on evolution.

Its Sushi Omakase is less about reproducing a traditional Edo-style sequence and more about demonstrating how Japanese technique can be expanded through carefully judged global influences. For diners already familiar with conventional omakase, that difference may be precisely the appeal.
