A Celebration of Malaysian Heritage: Merdeka Buffet at Lemon Garden, Shangri-La Kuala Lumpur

 This Merdeka, Lemon Garden at Shangri-La Kuala Lumpur is celebrating Malaysia’s 69th Independence Day with a special buffet that brings together the flavours, traditions and culinary stories of the nation.

Available for dinner on 30 August and lunch and dinner on 31 August 2026, the Merdeka feast draws inspiration from different states and communities across Malaysia, taking diners on a journey from the coastal kitchens of Kedah to the traditional cooking heritage of Sarawak.

Alongside well-loved favourites, the buffet also introduces specially created dishes that give familiar Malaysian recipes a fresh presentation while staying firmly rooted in the flavours that define local cuisine.

A Seafood Centrepiece Inspired by Malaysian Tradition

One of the highlights of the celebration is the Dulang Hasil Laut Warisan Merdeka, an impressive seafood platter inspired by the traditional Malay dulang serving tray.

Designed as a symbol of abundance, hospitality and communal dining, the platter brings together lobster, crab, squid, fish and mussels prepared with Malaysian spices, sambal and aromatic herbs.

At its heart is the Lobster Panggang Berempah, where fresh lobster is grilled to enhance its natural sweetness before being finished with aromatic Malay rempah.

The Sotong Panggang Percik takes inspiration from the familiar flavours of Kelantanese ayam percik. Tender squid is chargrilled before being glazed with a creamy sauce of coconut, chilli and spices, creating a rich combination of smoke, sweetness and gentle heat.

For diners who prefer bolder flavours, the Ketam Panggang Sambal Berlado features succulent flower crab grilled and coated with freshly pounded chilli and spices.

Another refreshing contrast comes from the Ikan Merah Panggang Air Asam, where grilled red snapper is paired with a lively air asam of shallots, chilli and lime. The acidity cuts through the smoky fish, producing a balance of tang, spice and freshness.

The platter is completed with Kupang Panggang Cili Padi Limau Kasturi, which combines grilled mussels with fiery bird’s eye chilli and fragrant calamansi, and Ketam Salji Panggang Berempah, featuring sweet snow crab seasoned with lemongrass, turmeric, garlic and chilli.

Taken together, the dulang is a fitting centrepiece for Merdeka — generous, colourful and intended to be shared.

Sambal at the Heart of the Malaysian Table

No celebration of Malaysian cuisine would feel complete without sambal.

Lemon Garden’s Merdeka buffet features several varieties, including Sambal Belacan Kampung, Sambal Tempoyak, Sambal Hitam Pahang and Sambal Kelapa Tradisional.

Each brings its own personality to the table, from the pungent savouriness of belacan and fermented durian to the dark, tangy character of Pahang-style sambal hitam.

Served alongside fresh ulam and other dishes, the sambals allow diners to customise each plate with different levels of heat, acidity and richness.

Fresh Flavours and Traditional Malay Salads

The lighter selections showcase the freshness and fragrance that are equally important to Malay cooking.

Jantung Pisang Santan Berempah combines tender banana blossom with creamy coconut and aromatic spices, offering a rich yet vegetal accompaniment to fresh ulam.

The Mangga Muda Berempah Melayu brings together crisp young mango, herbs, spices and chilli in a tangy Malay-style kerabu.

Meanwhile, Sotong Bunga Kantan Istimewa pairs tender squid with torch ginger, lemongrass and chilli. The floral fragrance of bunga kantan gives the dish a distinctive aroma while keeping the overall flavour bright and refreshing.

From Kedah to Sarawak

Regional cooking traditions also play an important role in the Merdeka menu.

Representing the north is Gulai Ikan Temenung Kedah, inspired by the flavours of Kuala Kedah. Mackerel is gently cooked with turmeric, chilli and aromatic spices, producing a comforting curry that pairs naturally with rice and fresh vegetables.

From East Malaysia comes Ayam Pansuh Sarawak, one of the buffet’s more distinctive heritage dishes.

Traditionally cooked inside bamboo, chicken is prepared with aromatic herbs that slowly infuse the meat as it cooks. The bamboo contributes a subtle earthy aroma, resulting in a dish that is gentle, fragrant and deeply connected to Sarawakian food culture.

These dishes help turn the buffet into more than a collection of favourites, offering diners a glimpse into the diversity of Malaysian regional cuisine.

Kambing Golek Takes Centre Stage

For many Malaysian celebrations, few dishes create a greater sense of occasion than kambing golek.

The Kambing Golek Istimewa features a whole lamb slowly roasted over an open fire until tender and deeply flavoured. Its presence immediately gives the buffet the atmosphere of a festive gathering, reflecting a dish commonly associated with weddings, celebrations and communal feasts.

Another hearty highlight is the Daging Rusuk Panggang Berempah, featuring tender ribs slowly roasted with lemongrass, herbs and warming spices.

Rich and aromatic, it offers a satisfying contrast to the lighter salads, seafood and vegetable dishes elsewhere on the buffet.

A Sweet Taste of Malaysia

The Merdeka experience concludes with an assortment of traditional kuih-muih and local desserts.

With their colourful appearance, varied textures and familiar flavours, these sweets provide a fitting final chapter to a meal built around Malaysian nostalgia and heritage.

Rather than relying solely on elaborate international desserts, the emphasis on traditional local treats reinforces the central theme of the buffet — celebrating the flavours Malaysians have grown up with.

A Merdeka Feast Built Around Togetherness

What makes Lemon Garden’s Merdeka buffet particularly appealing is the way it brings together different culinary traditions within a single dining experience.

From Kedah-style fish curry and Sarawakian bamboo chicken to sambal, grilled seafood, roasted lamb and traditional kuih, the spread reflects the diversity of Malaysian cooking while keeping the spirit of sharing at its centre.

The Dulang Hasil Laut Warisan Merdeka perhaps captures that idea best. Presented for communal enjoyment and filled with ingredients associated with Malaysia’s coastal identity, it celebrates not only flavour but also the act of gathering around a table.
