Lotus root soup (莲藕汤 Lin Ngau Tong) is one of the popular soup to enjoy at anytime. And this soup is said to be very nutritious and easy to prepare. And in here, we just fall in love with the soup and we can have them at anytime just as it is .
INGREDIENTS
700 g lotus root cleaned, peeled and cut into slices.
200 g raw peanuts soak in hot water ( you can choose to remove skin not)
500 g of porkbone
8 pcs Red dates
2 pcs Dried scallops soak in hot water
2 tbsp dried goji berries soak in water
1 litre of water
1 tbsp of salt for taste
HOW TO MAKE IT
1. Boiled a pot of water and blanch the meat for about 5 minutes. Then rinse in water and set aside.
2. After all items being chopped. Pour all of them do into the preassure cooker.
3. I am using Philips AIO Pressure Cooker. So, choose Slow Cook (HIGH) and let in cooked for 4 hours.
4. Once done , release pressure and enjoy the awesome soup.
