Continuing the successful partnership with luxury French brand Pierre Hermé Paris, The Ritz-Carlton, Hong Kong will introduce a vanilla-themed afternoon tea starting April 24, 2015.
For one month only, Café 103 at The Ritz-Carlton, Hong Kong will offer a special afternoon tea selection featuring pastry creations from Pierre Hermé’s Fetish Infiniment Vanille collection.
As Maison Pierre Hermé Paris’s latest Fetish series, the Infiniment Vanille collection is a celebration of the pastry chef’s adoration for vanilla. An insatiable gourmand, Pierre Hermé has created a special blend by combining three types of vanilla beans from Mexico, Tahiti and Madagascar. Each bringing their unique characteristics respectively – intense, floral and oak – the trio of flavours has since become the signature “house” fragrance and a perfume suited to epicurean audacity.
Once again, dessert fans in Hong Kong will be able to enjoy pastries made by Pierre Hermé Paris’ executive pastry chef from Japan together with the hotel’s Executive Pastry Chef, Richard Long.
Guests can look forward to an exquisite selection including the Tarte Infiniment Vanille, a layered tart composed of a delicate shortbread pastry crust with white chocolate vanilla ganache, and a cake imbibed with vanilla essence, topped with vanilla mascarpone cream. Offering a spectrum of flavours and textures to entice the palate, the tea set will also showcase other must-try items including the macaron, cream puff and pound cake.
Collaborating on the afternoon tea menu is Brook Wong, Chef de Cuisine (Western Banquet) of The Ritz-Carlton, Hong Kong. Creating a selection of savoury bites to enhance the experience, the chef says, “Vanilla is a widely used flavoring for pastries and desserts. On the other hand, its distinctive floral aroma also makes it an incredible ingredient for savory items, especially seafood”. Vanilla Smoked Salmon Roll is an all-time favorite featuring a delectable combination of vanilla oil, vanilla seeds, homemade smoked salmon and cream cheese. Green apple jam gives Vanilla Crabmeat Sandwich a refreshing tang and makes it a luscious treat. Forest Mushroom Tart is served with black truffle and vanilla sauce to enhance the aromatic profile of the quiche.
