During this pandemic, the most important thing that we have learned is to stay healthy. Health is the most important KEY in our life! Being a big fan of sweet potatoes, we usually steamed it as it is but now you can do more than that.
And if you are not aware, Beni Nagomi 極甘, a Japanese Sweet Potato variant, which is carefully cultivated in the warm regions of Ibaraki, Japan, is considered one of the most delicious and sweetest Yakiimo (meaning baked sweet potato in Japanese) from Japan.
And these awesome potatoes are beautifully aged in a special temperature warehouse for over 3 months before they are being baked in an infrared oven to optimise the taste and sweetness of the Yakiimo. During this aging process, no artificial additives are added.
Studies says that Sweet Potatoes brings loads of benefits to our health as they comes with the good source of vitamins and minerals, in particularly for Vitamin A in its raw form and once cooked, small variable changes in micronutrient density occur to include a higher content of vitamin C. Asides from that, they contains a high quality source of protein with no saturated fats and it completes with the source of complex carb to help fuel your body. With the high starch content but they are considered a low-glycaemic index (GI) food by the American Diabetes Association. This makes it a healthy food choice for diabetics.
And usually, we normally steamed, boiled and fried with batter whenever we purchase sweet potatoes. And this time, since we are under MCO, I have decided to use this sweet potatoes to make desserts for my home.
We are going to make a simple and yet healthy desserts ( Sweet Potato Soup) where you can enjoy them in less than 30 minutes. It is usually our home favourites as it is not just a desserts but they are healthy and delicious but adding in ginger into the soup can also remove wind and gas in the body
Here you goes with the recipe :
Ingredients:
1. 2 Beni Nagomi potatoes
2. 2 – 3 skew of pandan leave
3. Chopped 150 g on ginger (if you love ginger you can add more)
4. 1000 ml of water
5. 50 g of rock sugar
Methods :
1. Remove the skin for the ginger and the potatoes
2. Cut the potatoes and ginger according to your preferred size
3. Boil the water till it bubbles
4. Add in the potatoes, ginger, pandan leaf and rock sugar
5. Let it boiled till it is cook and soft
6. Remove the pandan leaf
7. Enjoy them when its hot.
