Spanish Guest Chef Jose Alonso debuts creation in The Library, The Ritz-Carlton, Kuala Lumpur

All the way from Singapore, Chef Jose Alonso who is the Michelin Star Chef is now at the Ritz –Calton Kuala Lumpur offering you with the best of this culinary now here.
Executive Chef Jose Alonso has honed his culinary skills after working for 10 years with many celebrity chefs, which include Sergi Arola, Francis Paniego as well as Spain’s most celebrated Chef, Santi Santamaria. Drawing from his work experience, Chef Alonso believes in serving cuisine which remains true to its Spanish roots prepared using fresh ingredients and offering variety to guests taking advantage of a wide variety of seasonal produce.  In contrast to the soft, relaxing ambience of the guest rooms and suites, the restaurants are imbued with energy, where they are envisioned to become hubs of culinary dynamism in a city already famed for its cuisine.
Come October 25 to 29, 2016, Executive Chef Jose Alonso who helms the Binomio Spanish Restaurante in Singapore, debuts his creations in Malaysia at The library at The Ritz-Carlton, Kuala Lumpur. He will take guests on a specially curated Spanish gastronomic journey that includes his signature dishes namely Arroz Negro (Squid ink paella with clams and calamari), Croquetas de Pollo y Huevo (Chicken and boiled egg croquettes) and Tallarines de sepia con Sofrito (Grilled cuttlefish served with Sofrito and veal vinaigrette).

Sandwich De Queso Fresco
Fresh Cheese Terrine Bikini
I love the delicious fresh cheese delights where the cheese is well prepared and the fragrant cheese taste is perhaps a absolute sensation. The creamy taste from the fresh cheese with the crispy bites of biscuits. Amazingly good.
Berenjenas Con Meil De Cana
Fried Eggplant, Honey
This is a good combination! The lovely delicious eggplant comes awesomely good where it is well deep fried till perfection and glazed with honey. The dish is simply good and the crispiness is there. The dish is pretty impressive and every munch is just so heavenly!
Tapas
Croquetas De Pollo Y Huevo
Chicken and Boiled Egg Croquettes
Combination of chicken and minced boiled egg all in one, in the inside and breadcrumb deep fried till perfection. It brings you with the creamy bites in the inside while at the outside, is crispy good!
 
Tallarines De Sepia Con Sofrito
Grilled Cuttlefish Sofrito, Veal Vinagreete
Not amazed with the appearance, but once a bite we are very impressed.  The cuttlefish is being removed the skin and then it is being frozen and then is sliced and cooked for 15 seconds. The dish comes simply appetising with the tangy texture, It is just so good where we could not resist every mouthful of it.
Pulpo A La Gallega
Grilled Atlantic Octopus, Escalivada, Smoked Paprika
Enjoy the lovely platter of the grilled Atlantic octopus on the top of the potatoes and with the tuch of hot paprika in it. It is indeed a new way to enjoy the octopus bringing you with the delicious, tender and mouthwatering sensation. This is truly one of my favorite ways to eat octopus.
Arroz 
Arroz Negro 
Squid Ink Paella with Seafood 
This is indeed an enjoyable dish to go for. Love the delicious squid ink Paella with Seafood where the dish is indeed impressive. The taste is just so good and I wish to have more.
Principles 
Jarrette De Cordero 
Braised Lamb Shank, Potato Purée, Piquillo Peppers 
Those who love lamb should be enjoying this. The Braised Lamb Shank comes impressively good where Chef had take a long way to cook the dish. The lamb had been marinated with salt and being slow cooked via sous-vies at 79 degrees for 11 hours. Added with the wine reduction and using the Spanish capsicum to cook them for a sweeter taste. And not just that, you are assured with the juicy texture of the dish.
Postre 
Churros Con Chocolate 
Traditional Churros, Chocolate Sauce
Don’t miss out this delicious Churros which served with the chocolate sauce.
