BRITTANY BLUE LOBSTER EXTRAVAGANZA @ JW MARRIOTT HOTEL HONG KONG

March 9, 2015 by StrawberrY Gal

The award-winning culinary team of JW Marriott Hotel Hong Kong is pleased to introduce a selection of Western and Chinese dishes using the exquisite blue lobster from Brittany. Enjoy the highly-prized crustacean prepared in a variety of enticing ways at Flint Grill & Bar, Man
Ho and Fish Bar, from 6 to 27 March. Far more flavourful than most other types of lobster, blue lobster is renowned for its unique blue colour shell, succulent flavour and firm texture. “Lobster lovers will enjoy the menus ourb culinary team has prepared to complement the exceptionally delicious crustacean; from modern preparation styles, classic dishes cooked with French flair to authentic Chinese cooking.” said Executive Chef Stephen Doe.

At Flint Grill & Bar (Level 5), Head Chef Sven Wunram will use a combination of delicate cooking styles and quality ingredients to present a selection of exquisite blue lobster dishes. Available during dinner and priced at HK$580 per 600 gram, some of the culinary highlights include baked lobster Thermidor with asparagus; “en cocotte” piquant seafood ragout with asparagus-morel-gnocchi; and grilled or steamed lobster with sea urchin butter. Or enjoy a sumptuous 4-course lobster set dinner menu at HK$1,080 per person.

In addition, Executive Chinese Chef Ip Kwok Fai will also prepare the Brittany blue lobster using an array of tantalising Cantonese recipes and quality ingredients to highlight the luscious and sweet flavour of the popular crustacean in Man Ho (Level 3). Enjoy a range of mouth-watering dishes such as steamed lobster with egg white and Chinese yellow wine, sautéed lobster with Matsutake mushroom or baked lobster with cheese. For those who prefer richer flavours, choose the wok-fried lobster with garlic, sautéed lobster with tomato and chilli sauce or braised lobster with ginger, spring onion and e-fu noodle. All à la carte dishes are available during lunch and dinner, HK$680 per dish.

Priced at HK$580 per 600 gram and available during lunch and dinner; pick the blue lobster
from the live tank at the alfresco Fish Bar (Level 7), and the culinary team will have it prepared
grilled or steamed, and served with signature French fries and salad. Diners may look forward to a unique “resort within a city” feel, complemented by an exceptional dining experience at the iconic Fish Bar.
