AN ALLURING INDULGENCE OF AMEDEI CHOCOLATES AT CAFÉ 103, THE RITZ-CALTON HONG KONG

June 6, 2015 by StrawberrY Gal

The Ritz-Carlton, Hong Kong announces its first collaboration with Amedei, a Tuscan chocolate brand known for working with the most valued cocoa plantations in existence, presenting a delectable Italian-themed afternoon tea at Café 103 from now until July 31.

Founded in 1990 by Cecilia Tessieri, the first female maître chocolatier, the Italian boutique workshop sacrifices the efficiency of mass production in pursuit of producing the best chocolate in the world from bean to bar. Cecilia oversees the whole production line, from cocoa beans to the finished products, paving the way for successive accolades from the London Academy of Chocolate Awards. Amedei is dedicated to sourcing the most prized cocoa beans from around the world, including Madagascar, Venezuela, Jamaica, Ecuador, Trinidad, Grenada and many more.  Amedei chocolate is highly acclaimed for retaining the aromatic characters of the place it is sourced from.

Fascinated by the exceptional quality and craftsmanship of Amedei chocolates, Executive Pastry Chef Richard Long of The Ritz-Carlton, Hong Kong sees a shared purpose between Amedei and Café 103’s famed chocolate afternoon tea. The Amedei afternoon tea features an enticing selection of sweet and savory treats inspired by Amedei’s most refined chocolate collection as well as its divine confections. Rich and delicate with fruity flavors of cherry, raspberry and redcurrant, Chuao chocolate gives the decadent chocolate scones a remarkably deep and complex flavor. Slathered with the additive Crema Toscana hazelnut and chocolate spread, the heavenly chocolate scone is a sweet indulgence in every bite. Playing with hints of honey, flowers and the velvety flavor of fresh milk, Toscano Milk Brown Chocolate makes Chuao Lavazza an irresistible mid-day pleasure. The cake features three distinct layers of Chuao chocolate chip, Lavazza coffee cream, as well as chocolate mousse, with each layer being a sweet surprise. The lemon curd is a perfect complement to the rich and flavorful chocolate foie gras mousse. The symphony of flavors takes the Swiss Roll with Chocolate Duck Foie Gras Mousse to a whole new level. Airy and creamy, the texture of the gluten-free Cremagelato lies between smoothie and soft-serve ice-cream. This signature product of Italian gelato brand Fabbri promises to end the pampering afternoon experience on a chilled and sweet cotton candy-like note. For full menu, please refer to appendix.
