Crustacean lovers should not miss out on experiencing the natural goodness of succulent Shanghai Hairy crabs as Master Chef Heng takes you on a gastronomic dining adventure at Lai Ching Yuen, featuring these crustacean catch as the main ingredient. Hairy crabs are also known as Chinese mitten crabs for their furry, mitten-like claws are highly sought after for their sweet and delicate meat and rich, bright-orange roe.
The usual hairy crab season starts in the ninth month of the Chinese Lunar calendar (mid-October and these crabs are featured in a myriad of mouth-watering preparations; guests can tuck into delicately prepared Shanghainese Dumplings with Shanghai Hairy Crab & Roe, a method that Chef Heng highly recommends as steaming the crabs one gets to taste both the roe and the meat, Braised Seafood Soup with Hairy Crab and Tofu, Braised Egg Noodle with Cube Scallop, Golden Mushroom & XO Sauce and end their meal with Chilled Almond Bean curd with Longan and wash it all down with chef’s special Ginger Tea concoction.
