As summer fades into fall, Hugo’s is brimming with fresh produce as Hugo’s French Executive Sous Chef, Eric Taluy, proudly presents the five-course Autumn Tasting Menu, featuring seasonal ingredients from land and sea with classic French flavours.
Kick start your meal with Foie Gras Au Torchon with Chestnut Confit and Toasted Brioche. Foie Gras Au Torchon is a classic flavour-packed French starter. The fresh foie gras is seasoned with salt, pepper, sugar and wine, and then wrapped into a tight cylinder for poaching and resting. Be amazed by the melt-in-your-mouth torchon served with slices of toasted bread, together with a soft and sweet in-season chestnut to amuse your palate.
Clams and mussels are at their peak in the autumn season. To ensure the inimitable taste and recognised quality, Chef Eric uses clams and mussels imported from Brittany, a mecca for lovers of shell fish, bringing the authentic taste of France to diners. Shell Fish Mariniere with Brittany clams, Bouchot mussels and Court-bouillon is cooked with light seasonings to accentuate the original sweetness of the shell fish.
Octopus is at its best in autumn. Dig into the delicate yet scrumptious Mediterranean Octopus, Pan Seared King Scallop with Salsa Verde and Fig Salad composed of soft and tasty charcoal-grilled octopus, seared golden-brown king scallops, sweet and refreshing seasonal fig salad, complemented with a delectable sauce made from fresh herbs to balance out the flavour.
Be impressed by the tender and juicy Roasted Venison Loin. Venison is one of the most popular fall meats, well known for being naturally low in fat and calories and high in protein. The venison is slow cooked, roasted and flash seared, paired with sautéed mushrooms, butter spaetzle and a strong elderberry sauce, offering a perfectly harmonised taste in one bite.
Last but not least, cheese lovers may opt for the Selection of “Les Freres Marchand” Artisan Cheese. Les Freres Marchand is a famous cheesemonger company since early 1880s, specializing in maturing premium cheeses from France with a limited amount exported overseas. Diners at Hugo’s can savour the perfect maturity of the cheeses from Les Freres Marchand with seasonal fresh fruit and homemade chutney. Alternatively, be tempted by the traditional French dessert Apple Tarte Tatin, in which the apples are beautifully caramelized and then oven-baked with puff pastry that goes perfectly with the homemade Williams pear sorbet for a perfect finale.
