
Restaurant Petrus, the eminent French restaurant on level 56 of Island Shangri-La, Hong Kong, announces the appointment of Chef Ricardo Chaneton as its new chef de cuisine. He will join Hotel Master Sommelier Yohann Jousselin and Maître d’Hôtel Ariane Dreyer in delighting patrons of this signature restaurant at the hotel with sublime culinary experiences.
Before joining Restaurant Petrus, Chef Chaneton was the chef de cuisine at Mirazur, the two Michelin starred restaurant founded by Chef Mauro Colagreco in Menton, France. Not only was Chef Chaneton in charge of the daily kitchen operation at Mirazur, he also played an essential role in the culinary development of Chef Colagreco’s restaurant in Shanghai when it opened in 2012. Together, they travelled to many places and presented Mirazur’s unique cuisine to the world. One of these epicurean tours included a sojourn at Restaurant Petrus during the Shangri-La’s 2015 International Festival of Gastronomy.

Chef Chaneton developed a fondness for cooking at a young age. He decided to enrol in a culinary school to further polish his craft, while gaining ample professional experience in the evening by working at a variety of restaurants. In 2008, he became a chef de partie at French fine-dining restaurant Le Gourmet in Caracas, which is considered one of the best restaurants in Venezuela. A year later, he took an apprenticeship at the then Michelin-starred Quique Dacosta in Spain before moving to Menton to join Mirazur.
Alongside Master Sommelier Yohann Jousselin, whose career in wine spans over 15 years, and Maître d’Hôtel Ariane Dreyer, who possesses considerable acumen in delivering extraordinary dining experiences, Chef Chaneton is ready to make his entrée in Hong Kong’s fine-dining scene.

Sourcing the best seasonal ingredients, he will apply his underlying principles in the preparation of the modern interpretation of classic French fare, designed to complement the restaurant’s cellar of exceptional wines.
“I am extremely passionate about creating new combinations and experimenting with flavours, while being careful not to compromise the freshness and originality of the food I prepare,” said Chef Chaneton.
Restaurant Petrus commands spectacular views of Hong Kong’s Victoria Harbour. It is renowned for one of Asia’s largest wine cellars, which features a premium Château Pétrus collection and extensive vintages from other famous and exclusive chateaux.
