AYAM™ UNVEILS AUTHENTIC ASIAN DISHES TO ENJOY THIS LUNAR NEW YEAR

To celebrate the start of the Chinese calendar year, AYAM™, Australia’s number one leading Asian food brand is calling for everyone to join them in the kitchen with new and delicious recipes. Combining authentic Asian flavours with fresh produce, AYAM™ has compiled a selection of delicious seafood recipes for families to experience a delicious Lunar New Year celebration.

From prawns to fish, Chinese people believe eating seafood during the Lunar New Year brings good luck and longevity, with fish as a sign of prosperity and prawns believed to bring happiness and laughter.

AYAM™ THAI PRAWN RED CURRY

Serves: 4 | Prep: 15 min | Cook: 10 min

Ingredients

1 tablespoon olive oil

1kg medium green prawns, peeled, deveined, leaving tails intact

3 tablespoons AYAM™ Thai Red Curry Paste

270ml AYAM™ Pure Coconut Cream

2 tablespoons fresh lime juice

1 tablespoon grated palm sugar

2 kaffir lime leaves (optional)

1/4 cup (60ml) water

1/2 cup fresh coriander leaves

Method

Heat 1 tablespoon olive oil in a frying pan over a high heat. Add 1kg medium green prawns, peeled, deveined, leaving tails intact and cook for 2-3 minutes or until cooked through. Reduce the heat to medium. Add 3 tablespoons of AYAM™ Thai Red Curry Paste, 270ml AYAM™ Pure Coconut Cream, 2 tablespoons fresh lime juice, 1 tablespoon grated palm sugar, 2 kaffir lime leaves (optional) and 1/4 cup (60ml) water to the pan. Cook for 5 minutes.
Add prawns, stir until heated. Stir in 1/2 cup fresh coriander leaves. Serve with steamed rice.

 AYAM™ MALAYSIAN SEAFOOD LAKSA

Serves: 4 | Prep: 5 min | Cook: 10 min

Ingredients:

1 jar AYAMTM Malaysian Laksa Paste 185g
1/2 can AYAMTM Coconut Milk 270ml
1 ½ cups water or vegetable stock
250g fried tofu or soybean curd, sliced
250g seafood mix (prawns, calamari, mussel)
1 cakes of AYAMTM Instant Noodles
100g beansprouts
Chopped coriander, to garnish

Method:

Combine AYAM™ Laksa Paste, AYAM™ Coconut Milk, water or vegetable stock in a large saucepan over medium heat. Cover and bring to the boil
Add soybean curd and seafood mix then reduce heat and simmer until seafood is cooked
Meanwhile, prepare noodles according to packet instructions. Drain and divide between 2 bowls
Ladle the soup over the noodles, top with beansprouts and coriander

Tip: Add a halved, hard-boiled egg to serve if desired

Substitute seafood with cooked chicken, fish pieces or raw prawns. Add some sliced red or green capsicum

BBQ MARINATED CALAMARI

Serves: 4 |Prep: 15 min | Cook: 2 min

Ingredients:

400g calamari tubes
2 tbsp. AYAM™ Oyster Sauce
2 tbsp. AYAM™ Plum Sauce
2 cloves garlic, crushed
2 tsp grated lemon rind
2 tbsp. olive oil
½ red capsicum, thinly sliced
1 red onion, cut into thin wedges

Method:

Open out calamari tubes, lay flat. Make shallow cuts into the inside of the tubes. Cut into small squares
Combine in a bowl with oyster sauce, plum sauce, garlic, and lemon rind. Refrigerate at least 30 minutes
Heat a barbecue plat to high. Heat oil, add capsicum and onion, stir-fry until tender, transfer to a bowl
Add calamari mixture to plate or pan, stir-fry for a few seconds until it just changes colour. Add to capsicum and onion, toss to coat
