Excite your taste buds with delicacies exquisitely made with Foie Gras de Canard and Fish Maw. This autumn, Harbour Restaurant at The Harbourview is pleased to present to you the “Foie Gras de Canard and Fish Maw” Dinner Buffet, the best choice for those who are looking for a yummy yet healthy diet.

Foie Gras de Canard is the ingredient commonly used for home cooking. It is not that oily, and is famous for its richness in flavor and texture.

Alternately prepared with Chinese and Western cooking methods, the delicious and nutritious dishes are the seasonal diets that prepare for a warm, dry autumn. Harbour Restaurant specially presents the following signature dishes that you can hardly resist:

Appetizer:

1. Foie Gras de Canard Mousse with Wanton Skin and Plum Wine Gel

Made with local Cantonese ingredient “Jin Halogen Wanton”, the dish is prepared with Foie Gras de Canard that is preserved overnight with the mixed ingredients of Brandy, herbs, salt and sugar before smashing to mousse. Wrapped in wanton skin, the baked fried dish filled with creamy mousse is seasoned with chef-made jelly sauce made with plum wine that refreshes your appetite.

Main Dish:



2. Deep Fried Dough filled with Foie Gras de Canard and Balsamic Reduction



Applying the design concept of the appetizer, the crispy dough is filled with smooth Foie Gras de Canard mousse topped with Balsamic Vinegar that balances the oily texture of this bite-size delicacy.

3. Grilled Foie Gras de Canard with Onion Jam & Toasted Brioche

Foie Gras de Canard is firstly preserved with simple ingredients, and is then mixed with onion, cinnamon, cloves and caramel before cooking with caramel on the next day. Served together with toasted brioche, this sumptuous sweet-sour dish is the mouthwatering delight of the day.

4. Foie Gras de Canard Cream Brulee with Sherry Vinegar

More than just a cream brulee, the steamed custard is made with mashed Foie Gras de Canard mixed with eggs, cream and butter seasoning with caramel and sherry vinegar. The caramel’s sweetness and the vinegar’s sourness are perfectly matched to enrich the taste of the smooth cream brulee.

5. Double-boiled Fish Maw with Chicken, Codonopsis and Astragalus Root

Widely recognized as the soup benefiting the inner circulation of “Qi” and blood, it is a traditional Cantonese double-stewed soup that you surely can’t miss during a warm, dry autumn.

6. Braised Vegetable with Fish Maw and Chinese Mushrooms

You can now enjoy this seasonal Chinese banquet dish in the dinner buffet. The dish is prepared with Fish Maw stewed in oyster sauce, dark soy sauce and broth-based soup together with Chinese mushrooms. Both ingredients are soft and thick. Served with seasonal vegetables, this is a healthy diet good for all ages.



7. Scrambled Egg White with Fish Maw and Crab Roe

The shredded Fish Maw is fried with scrambled egg white until it becomes hard. Bright-coloured crab roe is sprinkled on the refreshing delicacy as the eye-catching yet tasty finishing.

Dessert

8. Banana Chocolate Truffle Cake

 

Baked until golden brown, the mashed banana is mixed with butter, lemon sauce and 72% Lint Chocolate. Coated with a thin layer of chocolate sauce, the cake is perhaps the best banana chocolate delight you have ever tried.

9. Apricot Custard Almond Tart 

Made with almond and custard sauce and topped with apricot, you will be inspired by the mixed textures of its crispy tart and soft apricot.

10. Green Tea Mascarpone Cheese Cream in a Glass 

 

With Mascarpone cheese cream on the top, the dessert is a green tea-based creamy pudding that gives a tasty mix of tea and cheese.

In addition to the above key recommendations, the consistently popular dishes such as assorted cheese platter, sushi and sashimi, and grilled steak and lamb are still available. Cold dishes like Canadian snow crab legs, New Zealand oysters and American oysters are also presented and are the luscious seafood you can never miss.
