A GREEN ALTERNATIVE – OASIS GIANT GROUPER DELIGHTS AT REGAL COURT

The Giant Grouper is the largest member of the Grouper family. It is tasty and nutritious. However, the Giant Grouper has been over caught in recent years and is becoming rare with the possibility of becoming endangered. To demonstrate the sustainability commitment of Regal Kowloon Hotel, our Chief Executive Chinese Chef Tsang Chung Hong specially selects a green alternative – Oasis Giant Grouper and presents a delicious menu with ancient culinary style at Regal Court to entice diners’ palate.

Oasis Giant Grouper is fed by an indoor fish farm in Hong Kong using Recirculation Aquaculture System with quality assurance and the species is listed under “Green – Recommended” category in WWF Hong Kong Seafood Guide.

To satisfy the taste of fish lovers, Chef Hong has picked different parts of the grouper to showcase 18 promotion dishes. Let’s start with Crispy Skin with Spicy Salt or Deep-fried Fish Liver Scented with Wasabi to refresh your taste buds. The former is full of edible collagen and crunchy while the latter is using rarely served fish liver to present a tempting appetizer. Fish soup is nourishing, it is no doubt that Double-boiled Fish Head and Bones Soup with Black Garlic, Sea Whelk and Yam is a nutritional choice for gourmet indulgence. Highlighted main dishes include Wok-fried Grouper Fillet with Guava & Black Garlic while the fillet is super tender and compliments with the healthy Guava and Black Garlic, and Braised Fish Swing with Oyster and Dark Soy Sauce in Ancient Style which is simply seasoned with oyster and dark soy sauce to enhance the flavour. Sautéed Fish Belly with Fermented Soy Bean Paste in Hot Clay Pot is a mouth-watering pick as the fish bellies are full of juicy fermented soy bean paste. Finally the Braised Fish Stomach with Pomelo Skin, the stomach is one of the sumptuous parts of the grouper and perfectly matches with the oyster sauce to offer exceptional freshness.
