The Architecture of Heritage: Chef Amy Beh Revives Peranakan Culinary Traditions at DoubleTree by Hilton Shah Alam i-City

April 17, 2026 by StrawberrY Gal

The preservation of heritage recipes within the fast-evolving modern dining landscape requires more than just technical precision; it demands an authentic emotional connection to the cultural stories behind the ingredients. This May, DoubleTree by Hilton Shah Alam i-City successfully captures that delicate balance through an exclusive culinary collaboration with celebrated Malaysian chef and media personality Amy Beh. Transforming the hotel’s weekend dining experience into a sanctuary of traditional flavors, the collaboration introduces a curated Nyonya High Tea Buffet that honors Peranakan cuisine’s intricate techniques, complex spice pastes, and deep-rooted history of communal togetherness.

Peranakan cooking is defined by its meticulous preparation, relying heavily on the slow harmony of fresh aromatics, acidic elements, and complex braises. Chef Amy Beh brings her multi-decade career as an author, instructor, and culinary judge to the forefront, presenting a menu of signatures that are highly authentic in execution.

Diners are treated to standard-setting heritage classics, including a flawlessly textured Jiu Hu Char with snappy cuttlefish, a rich Fish Maw Soup brimming with fresh seafood, and savory Assam Heh Tamarind Prawns. The culinary matrix expands into beloved comfort staples like the intricately spiced Inchi Kabin Fried Chicken and a deeply robust Peranakan Laksa, closing with traditional dessert reductions including the highly aromatic Royale Pengat Nyonya.

Beyond the highly technical flavor profiles, the weekly showcase focuses on creating a multi-sensory environment for families to gather. The high tea sessions are beautifully paired with live acoustic busker performances, adding a modern, relaxed rhythm to the historic dining concept. Following a highly successful, elevated Mother’s Day weekend feature that included live interactive cooking demonstrations and sentimental polaroid keepsakes, the core Nyonya High Tea Buffet continues to run every Saturday afternoon through May 30. Priced accessibly with targeted savings structures for Hilton Honors members, larger family groups, and i-City commercial app users, this collaboration reminds us that our most profound cultural anchors are safely preserved around the shared dining table.
