Celebrating Culinary Excellence: The Oriental Group’s 25th Anniversary Menu

 The Oriental Group of Restaurants has crafted an exceptional menu to mark its 25th anniversary, showcasing the talents of a distinguished team of chefs with over 150 years of combined culinary expertise. This special menu features exclusive “off the menu” dishes and beloved bestsellers, embodying the rich culinary journey of the Oriental Group.

The team behind this gastronomic celebration includes Executive Chef Wong Chin Leong from Noble House, who has been with the group for 21 years, and Dim Sum Chef Mok Tin Wai of Oriental Pavilion, with 22 years of service. Master Chef Choong Yaw Loong and Sous Chef Yam Yoon Loy from Noble Mansion bring their 15 and 16 years of experience, respectively. Completing this ensemble of culinary experts is BBQ Chef Wai Kok Cheng from Oriental Treasure, with 14 years under his belt.

Soft shell crab and crispy enoki mushrooms fruit and vegetable salad

The anniversary menu begins with a soft shell crab and crispy enoki mushrooms fruit and vegetable salad, a delightful creation reminiscent of the festive yee sang but elevated with a sesame sauce. The salad is a vibrant mix of textures and flavors, with the soft shell crab providing a crispy, savory contrast to the fresh fruits and vegetables, while the sesame sauce adds a nutty depth.

Double-boiled superior bird’s nest

Next is the double-boiled superior bird’s nest, a luxurious dish featuring golden thread bird’s nest stuffed in chicken. This delicacy is known for its health benefits and is meticulously prepared to highlight the delicate flavors of the bird’s nest and the succulent chicken, creating a dish that is both nourishing and indulgent.

Deluxe roast suckling pig platter 

The deluxe roast suckling pig platter is a highlight, featuring Hong Kong goose liver sausage wrapped in Iberico slices. This dish offers a rich, savory experience, blending traditional techniques with modern flair. The crispy skin of the suckling pig contrasts beautifully with the tender, flavorful meat and the luxurious goose liver sausage, making each bite a symphony of flavors and textures.

Braised whole 5-head abalone 

Another standout is the braised whole 5-head abalone in a whole lotus root boat, accompanied by Japanese dried scallop, Korean grilled octopus, mushroom, and chicken. This sophisticated dish presents a harmonious blend of textures and flavors. The tender abalone, known for its umami richness, is complemented by the delicate sweetness of the lotus root, the smoky notes of the grilled octopus, and the earthy flavors of the mushrooms and chicken.

Peach Blossom Croquette

 

The croquette features a crispy exterior with a creamy taro and kurobuta pork filling, creating a delightful contrast of textures. The use of kurobuta pork, known for its marbling and rich flavor, elevates this dish to a gourmet level.

Braised ramen with king prawn 

Meanwhile, the braised ramen with king prawn offers a comforting yet refined experience. The ramen noodles are perfectly cooked to a chewy consistency, and the king prawn is succulent and flavorful. The broth, rich and savory, ties the dish together, showcasing the chefs’ ability to transform a simple dish into a culinary masterpiece.

Almond cream with egg white and jade corn dessert paired with green tea mochi. 

The meal concludes with a duo of desserts: almond cream with egg white and jade corn dessert paired with green tea mochi. 

The almond cream is smooth and fragrant, with the egg white adding a light, airy texture. The jade corn dessert, with its vibrant color and sweet, creamy flavor, is perfectly complemented by the chewy and slightly bitter green tea mochi, providing a balanced and satisfying end to the feast.
