Hyatt TST – Cafe Presents Stews from Around the World Themed Buffet

 Embrace autumn with heart-warming dishes as Cafe serves up a Stews from Around the World themed buffet from 1 October – 30 November 2021. An array of signature stews from around the world will be prepared by the culinary team, including Japanese, Thai, Indian, Western and Chinese stews.


Japanese 

Sumo Stew, a.k.a. the Chanko Nabe, is a bountiful hot soup served in a gigantic pot filled with mixed vegetables, mushrooms, and pork and seasoned with soy, sake and mirin in a dashi broth. It is exceptionally rich in protein and is traditionally served to sumo wrestlers who eat vast quantities to gain weight according to their diet plan. It is truly a delicious way for guests to warm up this season.


Chinese

Those who crave hot, spicy food will not be able to resist Chongqing braised fish with chili. A whole sea bass is first roasted until moist and tender with a crispy surface. It is then served steaming hot in a large pot with fried bean curd, sliced lotus roots and black fungus. It is robustly seasoned with exotic herbs and spices such as chili oil, dried chili, Sichuan peppercorns, star anise, black cardamom and coriander. Those who are not fans of spicy food can go for Stewed lamb belly in a clay pot, a popular dish in Hong Kong enjoyed on cold days as it is believed that consuming lamb can improve blood circulation and, thus, keep the body warm.

Western

Pot-au-feu means “pot on the fire”. It is a braised beef stew with vegetables and horseradish, a simple and quintessential French family meal, as well as a national dish, heralding the start of autumn. Marmitako is one of the most traditional Basque fish stews. It is a delicious tuna stew with potatoes, tomatoes and chili that bursts with the flavours of the fresh ingredients. The famous French specialty Coq au vin is red wine-braised chicken with mushrooms, bacon and mashed potatoes. It is a saucy and gratifying dish layered with the rich aroma of wine, earthy mushrooms and sweet onions.

Southeast Asian

Delight your senses with Thai Panang Duck Curry, a red curry stewed with lime leaves, coconut milk, cilantro, cumin and peanuts. Other highlights include Indian cheese stew with tomato, Persian curry chicken stew and Indian Scotch egg kofta curry.

 

In addition to the themed buffet delicacies, guests can also enjoy a sumptuous range of seafood on ice. Dinner buffet guests can enjoy unlimited whole live sustainable Boston lobster poached to their preferences.
