The Ritz-Carlton, Hong Kong’s Tosca Launches New “La Dolce Vita” Lunch Menu

Tosca’s new “La Dolce Vita” lunch takes culinary aficionados on a sumptuous journey to explore the rich and diverse cuisines in Italy’s Tuscany region. Every Saturday afternoon from September 1, 2018 onwards, Tosca shines the spotlight on traditional Tuscan delicacies created by Chef de Cuisine Nicola Russo.

“I learned the recipes from my grandmother when I played in her kitchen as a child,” says Chef Nicola, a Tuscan-native. “My new menu adds a fine-dining touch to the classic Tuscan dishes.”

Chef Nicola’s menu features iconic Tuscan dishes including Panzanella- a refreshing bread salad served with yellowfin tuna tartare; Cacciucco Alla Livornese – a traditional seafood soup originating in the port of Livorno and Tagliata di Manzo – a decadent charcoal grilled Florentine-style steak. Putting a perfect ending to the gourmet journey is the Toscana “picnic basket” – a photogenic sweet surprise that delights your palate.

“Some of the dishes are perfect for sharing reflecting both the Italian and Chinese dining cultures,” says Chef Nicola.

Accompanying the gourmet dishes are our sommelier’s choices of digestives and wines from Tuscany including the Chianti Classico Ama from Castello di Ama and Rosato Toscana IGT of Capannelle fame.

Born in Pisa- the historical city of Tuscany, Chef Nicola found his passion for the culinary arts at an early age. After graduating from a prestigious culinary institution at the age of 18, he honed his skills at a slew of Michelin-starred restaurants and luxury hotels in Europe, the Middle East and Asia.

Having joined Tosca in 2017, Chef Nicola continues the Michelin-starred restaurant’s pursuit of showcasing culinary excellence and innovation on the palates of the most discerning gourmands.

Prior to his post at Tosca, Chef Nicola was Chef de Cuisine at II Ristorante at the Bulgari Resort Bali. He has garnered 15 years of culinary experience in international luxury hotels and restaurants. And he is also an avid runner and Triathlon enthusiast.

Price: HK$578+10% per adult for five courses
HK$828+10% per adult for five courses with wine pairing
