ENJOY FESTIVE-LICIOUS FEAST AT HUGO’S @ HYATT REGENCY HONG KONG

This holiday season, our Swiss-born Hugo’s head chef Marco Mehr will present his first festive-licious menus to please Hong Kong diners.  Enjoy a series of gourmet delights with your loved ones at this fine-dining restaurant for a truly authentic European dining experience.

Festive-licious Silent Night 



Take part in a lavish dinner party with live music on Christmas Eve and feast on an extensive six-course European gourmet menu.  The menu will start with blue lobster and scallop tartar with compressed beetroot, horseradish and champagne vinaigrette; followed by pan-fried Bresse pigeon with French foie gras, persimmon, brioche and Cassis pigeon jus for a bit of elevated indulgence. Be sure not to miss the French bouillabaisse with Australian yabbie, celeriac flan and rouille sauce.  For the mains, feast over the freshest poached French sea bass with Oscietra caviar, sous vide fennel and sea urchin foam and the delightful crispy roasted US beef tenderloin with Bayonne ham wrapped black truffle mashed potatoes, arugula and pumpkin. A finale of tantalising European Christmas dessert, chocolate and Morello cherry mille-feuille with eggnog ice cream, will surely be a joy ride for the senses!


Festive-licious New Year’s Eve 



Gourmands can usher in 2016 with an enticing six-course New Year’s Eve set dinner at Hugo’s, while dedicating favourite songs to loved ones by our singer.  The dinner will start with a French foie gras variation with passion fruit, mango and christstollen which is alluring to both eyes and taste buds.  Then, indulge in Hokkaido scallop confit with Oscietra caviar, endive, persimmon and sea urchin foam as well as cepe velouté which is served with poached quail egg, crispy enoki mushroom and hazelnut oil.  For the mains, enjoy the seared Spanish wild turbot with brioche thyme crust, champagne risotto and garden herbs; and slow roasted US beef tenderloin with braised beef short rib croquette, cauliflower truffle mousseline, braised onion and natural beef jus – the climax of this sizzling festive feast.  Last but not least, have a perfect ending with intriguing vanilla bean and saffron cream served with red currant and yuzu apricot sauce.

Festive-licious Brunch



On Christmas Day and New Year’s Day, Hugo’s festive-licious brunch will offer a wide array of celebratory options.  Guests can enjoy a gorgeous semi-buffet featuring sumptuous seafood-on-ice including oysters, lobsters and crab legs, and indulge in Hugo’s signature hors d’oeuvres.  Pick your favourite from a range of made-to-order main courses such as roasted US beef ribs, roasted French guinea fowl with foie gras, slow braised Australian lamb shank, herb roasted French monkfish, as well as egg specialties such as scrambled eggs with black truffle, European seasonal mushroom omelette or egg benedict cardinal – a selection sure to satisfy every palate.  To complete the culinary experience, a selection of mouth-watering, hand-crafted desserts will be offered; while free-flowing champagne, white wine and red wine will be available for guests seeking premium indulgence during the festive season.

Hugo’s is an elegant yet casual European restaurant serving traditional Western cuisine prepared only with the finest ingredients available. It is a popular venue for gatherings and celebrations with premium food and wine as well as quality service.
