“NOSTALGIA SPECIALTIES” SHOWCASE AUTHENTIC CANTONESE CUISINE AT LOONG YAT HEEN OF THE KOWLOON HOTEL

Emphasis of authentic Cantonese cuisine is laid on the presentation and taste, but also, the great skills used while cooking. Chef Yeung Kin-Yip, expert in authentic Cantonese cuisine, is renowned for his masterpieces with quality craftsmanship and choice of finest ingredients. Chef Yeung is leading his team in preparing “Nostalgia Specialties” at Loong Yat Heen this July – August, showcasing some of the most classic and authentic Cantonese dishes.

 Barbecued Sliced Pork with Chicken Liver  (HK$168)

Literally meaning “Gold Coin Chicken” in Cantonese, it is one of the most classic dishes that depict the essence of authentic Cantonese cuisine. The sandwich-like delicacy consists of four layers: the top and bottom are barbecued pork, in between are chicken liver and translucent pork belly fat – which has been marinated in white sugar and rice wine for translucency. The layers are coated with honey then roasted together, the distinct flavors of each layer fuse together, unique but not greasy.



 Braised Preserved Pomelo Peel with Shrimps Seed  (HK$168)

Another classic representative of nostalgic Cantonese cuisines: the pomelo skin is soaked in water, and then wrung by hand repeatedly to remove the pomelo skin’s astringency. The sponge-like pomelo skin is served on fish soup and sprinkled with the supreme shrimp seed, which gives the dish an extra savory kick.



 Stewed Goose with Onion in Supreme Soya Sauce  (HK$188)

This Hakka-style dish is another try-worthy classic Cantonese delicacy.  The marinated goose is cooked in hot oil while being turned constantly, this step is crucial as it gives the goose the signature golden brown crispy skin and tender meat. Served with an appetizing supreme soya sauce, it is a mouth watering dish that should not be missed.



 Double-boiled Mini Winter Melon Soup with Assorted Seafood  

HK$428 (for 4-6 persons)    HK$888 (for 8-12 persons)

Whet your appetite by our “Double-boiled Mini Winter Melon Soup with Assorted Seafood”, the hollowed winter melon is stewed in superior soup for 5-6 hours together with shrimp, crab meat, bamboo pith, minced ham, luffa and roast duck meat. Best soup to brighten up your palate in this summertime.
