A Thoughtfully Composed Lunar New Year Feast at Toh Yuen, Hilton Petaling Jaya

Chinese New Year dining is as much about symbolism and intention as it is about flavour. At Toh Yuen, Hilton Petaling Jaya, the festive menus reflect this philosophy with confidence — offering a carefully curated Cantonese feast where premium ingredients, balanced seasoning, and traditional techniques come together in a measured, elegant progression.

The Abundant Wealth set menu stands out for its restraint and pacing, making it particularly well-suited for family reunion dinners and corporate festive gatherings. Rather than overwhelming the table with excess, the menu unfolds gently, allowing each dish to express its character while maintaining harmony throughout the meal

The meal begins with the Hokkaido Scallops and Silver Fish with Auspicious Fruit Yee Sang(大吉大利北海道带子银针水果锦绣捞起), a refined interpretation of the festive classic. Sweet, plump scallops from Hokkaido anchor the dish, paired with crisp silver fish and a medley of fresh fruits. Lightly dressed and refreshing, the yee sang sets the tone for the meal — celebratory yet composed, vibrant without being overpowering.

Next comes the Braised Hokkaido Dried Scallop and Crab Meat Broth with Fish Maw(瑶柱鱼鳔蟹肉羹), a soup that exemplifies Cantonese mastery. The broth is rich and layered, yet remarkably clean on the palate. Dried scallops impart a gentle sweetness, while crab meat and fish maw contribute texture and depth. It is a soup that comforts without cloying — a hallmark of well-executed Cantonese cuisine.

The Roasted Cherry Valley Duck with Braised Mustard Greens and Peanuts(梅菜花生烧樱桃鸭) follows, offering a savoury interlude grounded in familiarity. The duck is roasted until tender, its natural richness balanced by the gentle saltiness of preserved mustard greens and the earthiness of peanuts. The dish feels reassuring and nostalgic, evoking the kind of flavours often associated with family gatherings around the festive table.

Seafood takes centre stage with the Steamed France Turbot with Dried Orange Peel and Ginger(陈皮姜丝蒸法国多宝鱼). Prepared with minimal intervention, the turbot is steamed until perfectly flaky, allowing its natural sweetness to shine. The addition of aged orange peel lends a subtle citrus aroma, while ginger provides gentle warmth — enhancing, rather than masking, the fish’s delicate profile.

The Pan-Fried Tiger Prawns with Honey Soy Sauce and Pickled Ginger(姜牙蜜汁大虎虾) introduce contrast and energy to the meal. The prawns are firm and succulent, glazed lightly with honey soy sauce that strikes a careful balance between sweetness and umami. Pickled ginger cuts through the richness, refreshing the palate and keeping the dish lively.

A classic Lunar New Year highlight arrives in the form of Braised Sea Cucumber and Dried Oyster Bean Curd Roll with Seasonal Vegetables(红烧海参发财合家还珠时蔬). Revered for both its texture and auspicious meaning, the sea cucumber is braised until tender, paired with dried oysters and seasonal vegetables. This dish embodies prosperity and togetherness — central themes of the festive season — while remaining refined and well-balanced.

The savoury journey concludes with Fried Glutinous Rice with Cantonese Cured Meat wrapped in Lotus Leaf(荷叶腊味糯米饭). Aromatic and satisfying, the rice absorbs the essence of cured meats and lotus leaf, delivering depth and warmth. It is filling without being heavy — a comforting anchor before dessert.

Dessert begins with Chilled Snow Nest with Water Chestnut and Longan(金盏桂圆雪燕糖水), a light, cleansing sweet soup that refreshes the palate. The natural sweetness of longan and the delicate texture of snow nest make for an elegant transition.

The final course, Steamed Pandan Rice Cake with Grated Coconut and Purple Potato Egg Yolk Lava Ball(椰丝蒸班兰年糕拼紫薯流沙球), offers a nostalgic yet indulgent finish. Fragrant pandan rice cake provides softness and warmth, while the purple potato lava ball releases a rich salted egg yolk centre — a satisfying end that feels both festive and comforting.
