Xin Cuisine at Concorde Hotel KL Unveils New Line-Up of Cantonese Signature Dishes

Xin Cuisine Chinese Restaurant, the signature Cantonese dining destination at Concorde Hotel Kuala Lumpur, proudly introduces a new line-up of classic signature dishes crafted under the leadership of Master Chinese Chef Foong Ah Kwai. With more than 50 years of experience in Cantonese cuisine, Chef Foong continues to honour time-honoured recipes while elevating familiar flavours with premium ingredients and refined techniques.

Celebrating the Taste of Tradition

Throughout his career, Chef Foong has been devoted to creating food that evokes both comfort and nostalgia. His philosophy is simple: food should be prepared with fresh ingredients, patience, and respect for tradition. Every dish at Xin Cuisine is designed to reflect the warmth of heritage cooking and the feeling of home.

Classic Signatures Reimagined

Among the newly unveiled classics are:

Signature Roasted Goose — RM420 per whole; RM230 per half

A delicacy from Guangdong, the goose is marinated with soy sauce, herbs, and spices, then slow-roasted for hours to achieve crispy skin and tender meat. Available on weekends, weekday orders require three days’ advance notice.

Pork Tripe with Whole Farm Chicken — RM250 nett

A dish requiring six hours of meticulous preparation, pork tripe is stuffed with a whole chicken and simmered for hours alongside chicken feet, ginkgo, yuzhu, and pepper. The result is a collagen-rich, peppery broth that embodies patience and craftsmanship.

Honey Glazed Iberico Pork Ribs — RM172 nett

Premium Iberico ribs are steamed for tenderness, oven-baked to caramelize, and finished with a luscious honey glaze for a sweet-savoury balance.

Golden Beancurd with Abalone and Sea Cucumber — RM52 nett per head

Made fresh in-house daily, the silky beancurd is pan-fried to golden perfection and paired with 10-head abalone and sea cucumber for an elegant centrepiece.

Wok-fried Flat Rice Noodles with Fresh Water Prawn & Scallop — RM85 nett

A long-time favourite, the flat rice noodles are wok-fried and topped with a velvety egg gravy enriched with prawn and scallop, blending homely comfort with refinement.
