GOLD MEDAL FOR KWAN CHEUK HEEN AT 2014 BEST OF THE BEST CULINARY AWARDS

Harbour Grand Hong Kong’s Kwan Cheuk Heen is proud to be the Gold Medal winner of the culinary event of the year – 2014 Best of the Best Culinary Awards – Dim Sum Category (Shao Mai and Buns with Molten Filling) organized by the Hong Kong Tourism Board. This is the second time that the hotel’s signature restaurant brings home a Gold Medal in the same cook-off since year 2012.

Steamed Pork and Lobster Dumpling with Black Truffle XO Sauce and Oven Baked Durian Custard Bun, which comes in a duo as the requirement of the Shao Mai (dumpling) and Buns with Molten Fillings category, are the new creations by Dim Sum Sous Chef Sam Lam of Kwan Check Heen.

Unlike traditional Chinese molten filling buns which are steamed, Chef Lam has taken it to the next level and changed its cooking method to baking, which requires extra skills in maintaining not only the molten form and moisture of the durian custard filling, but also the crunchy crust. To stand out from other competitors, Chef Lam has used local baby lobster as the key ingredient for the “Shao Mai”. Coated with a wrap made with glutinous red rice matching the colour of lobster, this extraordinary lobster dumpling is topped with the restaurant’s home-made black truffle XO sauce for a well-rounded taste.

Both the Steamed Pork and Lobster Dumpling with Black Truffle XO Sauce and Oven Baked Durian Custard Buns are now available at Kwan Cheuk Heen, complementing Lobster Stuffed with Sautéed Black Truffles, Crab Meat, Mushrooms, Asparagus and Homemade Supreme Truffle XO Sauce, which is the Gold Medal winning dish in the Lobster Category of Best of the Best Culinary Awards 2012.
