CAFÉ 103 CELEBRATES THE JOY OF TOGETHERNESS WITH THE DEBUT OF VALRHONA AFTERNOON TEA

This year, with Chinese New Year and Valentine’s Day celebrated within the same month, February, we have more reasons to celebrate love and togetherness. Nothing melts a heart like chocolate. Executive Pastry Chef Richard Long proudly introduces an exquisite afternoon tea set featuring satisfyingly sweet and savory items inspired by Valrhona Chocolate. With a color theme interestingly shifting from red (February 1 to 12) to pink (February 13 to 29), the Valrhona Afternoon Tea is lovingly presented to celebrate the festivities of Chinese New Year and the romance of Valentine’s Day with beautiful rosy hues.
Valrhona has been producing the world’s finest chocolates in the small village of Tain-l’Hermitage, France since 1922. For almost a century now, Valrhona continues to create a range of unique and recognizable aromatic profiles by perfecting techniques to enhance the flavor of rare cocoa beans, grown on land masterfully selected for its terroir. Admiring the complex, balanced and consistent flavors of Valrhona’s products, Chef Richard Long finds much pleasure working with them for his desserts. “Valrhona is the cocoa expert with its own plantations in Venezuela and the Dominican Republic. Their dedication to the creation of artisanal quality chocolates echoes the unwavering commitment of The Ritz-Carlton, Hong Kong to refined craftsmanship fostered by ‘The Art of The Craft’ philosophy” said Chef Richard.
Chef Richard’s talent in melding up flavors from different ingredients is best reflected in Manjari Passion Bar. The acidulous hints of red and dried fruits in Manjari chocolate mousse perfectly match the fresh and tangy passion fruit cream, offering an irresistible pleasure in every bite. From the intense taste of lemon confit to the refreshing sweetness of lemon curd, followed by warm notes of milk and vanilla in Ivoire white chocolate cream, Ivoire Lemon Tart stands out with a delightful transition of flavors. Nothing can convey romance and express one’s passion better than roses. The Infiniment Rose Macaron with floral notes of rose is undoubtedly the perfect treat for this special occasion. The pickled beetroot in the Scottish Smoked Salmon Bread Cube perfectly complements the flavorful smoked salmon and adds a beautiful pink color. Chocolate Scones are slathered with the decadent Guanaja chocolate cremeux spread to reveal a whole range of flowery notes and an intense flavor. For the full menu, please refer to the appendix.
