Where do we start on the delicious pay-off of the Ayam Brand local pastes and Coconut Milk combo? Here are a few examples of what we cooked up with step-by-step instructions. Add your own spin to these recipes and create authentic traditions for your family with Ayam Brand™. In the meantime, find the super simple step-by-step instructions to make and serve authentic Malaysian favourites.

Chicken Kurma

While little ones may find chicken curry to be too spicy, chicken kurma with its mellow and comforting coriander notes is well-loved by everyone and will not be too much for delicate tummies trying out fasting for the first time.

Instead of a takeaway pack from your nearest mamak make your own. In a medium pan over medium heat, add a pack of Ayam Brand™ Kurma paste, saute until fragrant. Add 160g of diced potatoes, 160g of diced carrot and 600g of chicken chunks, saute until medium well done. Add 400ml of water, cover the pan with lid and let it simmer until the chicken and potatoes are cooked. Add two red onions that has been cut into chunks, 160ml of Ayam Brand coconut milk, and bring to the boil. Optional but very pretty, add a garnish of coriander leaves and sliced red chillies. Serve with rice.

Prep time: 10 minutes, cooking time: 20 minutes, serves: 4 to 5 pax

Daging Masak Merah

A classic Malay favorite for when you’re craving spicy umami flavour. Don’t order out when it is quicker and more delicious to make it yourself.

In a wok heat a tablespoon of cooking oil, and fry up 600g of sliced sirloin beef and remove to drain. Slice two red onions into rings, and dice one yellow capsicum, saute them in the same pan, then pour in one pack of Ayam Brand Masak Merah paste and mix well. Add the meat back in, stir well to coat, and let it simmer for a few minutes for the meat to absorb the flavours. Dish out, and garnish with some Ayam Brand Garden Peas. Serve with hot rice.

Prep time: 5 minutes, cooking time: 15 minutes, serve: 4 to 5  pax

Pucuk Ubi dan Udang Masak Lemak

Among the most comforting Kampung-style dishes is masak lemak that has a piquant creaminess that is like a warm hug, with a spicy kick. Achieve this culinary effect at home with the Ayam Brand Masak Lemak Cili Padi Paste.

Simmer 800ml of water, Ayam Brand Masak Lemak Cili Padi Paste and three stalks of crushed lemongrass in a pot.  Add 600g of prawns, then bring to a boil until the prawns are just cooked. Add in 600g of pucuk ubi, 800ml of Ayam Brand Coconut Milk, and 6 turmeric leaves that have been thinly sliced. Cook until the liquid thickens into a delicious sauce. Serve with rice.

Prep time: 5 minutes, cooking time: 15 minutes, serve: 4 to 5 pax

Kari Ikan

If you miss the traditional fish curry that is traditionally served with Nasi Dagang, reach for Ayam Brand Fish Curry Paste and make this East Coast staple a reality.

In a wok, heat the Ayam Brand Fish Curry Paste until fragrant, approximately 3 minutes. Add 600ml of water bring to a slow boil. Add 600g ikan tonggol or for more convenience use two 300gm can of Ayam Brand Mackerel in Tomato Sauce, add 400ml of Ayam Brand Coconut Milk, cover with lid and simmer on low heat until the fish is cooked. Add curry leaves, and allow to simmer for another 3 minutes. Garnish with red chillies and coriander. Serve with white rice, or for more authenticity serve with nasi dagang.

Prep time: 5 minutes, cooking time: 30 minutes, serve: 4 to 5 pax
