“BUTCHER TO THE STARS” HUGO DESNOYER BRINGS TOP MEATS FROM PARIS TO ISLAND SHANGRI-LA, HONG KONG

From 8 to 12 April 2014, famed Parisian artisan butcher Hugo Desnoyer will present his best wares at the Michelin-starred Restaurant Petrus. Apart from a specialty menu designed by our Chef de Cuisine Frederic Chabbert, the pinnacle of the promotion will be a “Jackson Family and Hugo Desnoyer Wine Dinner” on 12 April 2014. Epicureans will be offered an exceptional pairing of quality French meats and top-notch Californian wines to be presented by two Master Sommeliers – Island Shangri-La’s Yohann Jousselin and Jackson Family Wines’ Dimitri Mesnard.

Renowned for his esteemed clientele, Hugo Desnoyer has been supplying meats to admirable names such as Alain Passard and Pascal Barbot for Michelin-starred restaurants and prestigious establishments like the Élysée Palace. Emphasising the importance of knowing the origin of the animals, Desnoyer maintains a close relationship with breeders he knows well, and even visits the farms regularly to ensure their operations are up to his required standards.

Desnoyer also believes that the right cut of the meats is vital in bringing out the best of the animals. To achieve the perfect cut, he adheres to his philosophy that the animals must not be stressed during the moment of slaughter; otherwise the quality of meat will be compromised. Relaxation is attained by playing classical music to the animals at this critical moment, which attributes to the optimal tenderness of the meats.
During his sojourn in Hong Kong, Desnoyer will personally explain to diners the different cuts of meat which will be presented on a trolley at Restaurant Petrus. Exquisite products, including milk-fed veal from Corrèze, beef limousine from Vienne and milk-fed lamb from Lozère, will be cooked to perfection and demonstrated in eight dishes by Chef Chabbert. A grand finale to this promotion will be the “Jackson Family and Hugo Desnoyer Wine Dinner” to be held on 12 April 2014 at Restaurant Petrus. Priced at HK$2,400 with a 10% service charge per person, the five-course menu will be complemented by a hand-picked selection of Jackson Family wines to be presented by two Master Sommeliers – Asia’s only Master Sommelier Yohann Jousselin from Island Shangri-La, Hong Kong and  Chairman for the European Court of Master Sommeliers Dimitri Mesnard from Jackson Family Wines. The connoisseur trio, including Desnoyer, promises an unforgettable evening of delectable fare and exquisite wines.
