The kan-buri is a yellowtail variety available only during winter, famed for its fatty, rich in oil meat and nutritional properties. Caught off the seas of Himi, Japan and flown all the way to Kuala Lumpur, Malaysia, the rough waves and strong currents result in a hardy fish making it perfect to be served raw or cooked.
