THE HERITAGE SERIES- BEEF & DUCK MENU AT LOUNGE & BAR

Starting October, The Lounge & Bar at The Ritz-Carlton, Hong Kong shines the spotlight on some of the world’s most ancient livestock breeds. Gourmets are invited to savor the original flavors of such dwindling heritage breeds including the Guernsey and Blue Grey Cow as well as the Aylesbury Duck.

“Compared to the industrial farmed products, the ancient breeds have very distinct tastes and are much more nutritious,” says Executive Chef Peter Find.

The set dinner menu featuring rare breeds Guernsey Cow- known for its deep-yellow “golden butter” and Blue Grey Cow will be available until December 9, 2018. Following the beef menu, The Lounge & Bar will be launching a duck-themed menu starting December 10, 2018, available until the end of January 2019. 

Heritage Beef Menu:
The menu will highlight both the Guernsey Cow and Blue Grey Cow. The Guernsey Cow originated in the Channel Islands between France and England is known for its nutritious milk in rich golden color. The milk has three times more of Omega 3 than other breeds of cows.

Heritage Duck Menu:
Enjoy the festive celebration with the decadent Heritage Duck menu. The star of the menu is the Aylesbury Duck- a rare English breed raised on the rolling green hills overlooking Port Campbell near the famous Great Ocean Road in Victoria, Australia. The ducks roam freely from dawn to dusk and are kept on a diet of seasonal fruits including strawberries, quinces, pears and grains that have been fermented with fresh apples.

Price:     HK$580 per person
                HK$790 per person with ale & sparkling wine pairing
