The Murray, Hong Kong, a Niccolo Hotel, is delighted to announce today the launch of Popinjays, its sophisticated rooftop dining and bar concept. Reflecting Hong Kong’s vibrant, cosmopolitan style, the lifestyle destination is designed to attract the city’s flamboyant, fashionable crowd throughout the day and late into the evening.

 

Popinjays, a term once assigned to parrots, takes its name from the resident cockatoos along neighbouring Garden Road, Hong Kong Park and Hong Kong Zoological and Botanical Gardens. Naturally drawn to being part of a flock, and rarely flying solo, the habits of these birds embody Popinjays’ sociable spirit.

As the hotel’s lifts open onto the rooftop, guests are drawn to the stylish bar and wraparound terrace that frames the restaurant. Dotted with inviting lounges and comfortable couches, the 420m² outdoor terrace provides the perfect vantage point to appreciate the most Instagram-worthy views. Along with a world-class selection of classic cocktails, bespoke creations and specialty spirits, guests can choose from a variety of bar snacks.

Set within a purpose-built glass pavilion atop the 25 storey building to provide abundant natural light, the restaurant welcomes up to 114 guests. Designed by Foster + Partners, the interiors feature a sophisticated palette of cool greys, gold accents and bold blues while works by leading American artist and designer Brian Donnelly (KAWS) adorn the walls, elevating the sense of understated luxury. Those seeking an intimate dining experience, The Aviary is a private room ideal for business gatherings, celebratory occasions or exclusive dinners for up to 14 guests.

Chef Didier Quennouelle will bring his 25 years’ of experience to the Popinjays kitchen and deliver a modern European-inspired menu. Drawing on the traditions of French gastronomy, the master chef will interpret classic dishes with his signature creative flair lending a distinctive Gallic influence. From Monday to Thursday, guests can choose from a four or six-course seasonal degustation menu that will change weekly. A curated selection of vintage champagnes and wines will complement the dining experience.

Every Friday and Saturday, diners can look forward to the party-prompting ‘Birds of a Feather menu.’ Available for a minimum of four guests, it features a selection of shared dishes and free-flow cocktails. Transitioning from day to night, a resident DJ will greet Wednesday to Saturday evenings with a smooth blend of chilled tunes and hot mixes.

“On our very first visit to the site, we were inspired by the panoramic views from The Peak to the harbour from the rooftop of the Murray Building,” explains Luke Fox, Head of Studio, Foster + Partners. “We sought to capitalise on the unique location of The Murray by relocating the services to other unobtrusive locations within the building, and creating an extraordinary setting for Popinjays that embraces the intense urbanity and unique topography of Hong Kong.”
