Tosca of The Ritz-Carlton, Hong Kong has teamed up with renowned Italian jeweler, Damiani, to present an afternoon tea menu created by Michelin-starred Chef Pino Lavarra, taking inspiration from Damiani’s Mimosa collection.
The classic compositions of the Mimosa collection have a unique, airy look as light and elegant as its namesake spring flower, and Chef Pino’s modern high tea menu echoes the elegance of Damiani’s creations while paying homage to the brand’s distinguished heritage.
The diamonds and gemstones of the Mimosa collection are artistically arranged to suggest delicate blossoms. Precious stones are set almost casually, in what Giorgio Damiani himself defines as “a chaos of diamonds,” resembling the natural sway of a flower.
Those taking tea will have the opportunity to sample the mastery of the Mimosa collection, which will be on show in a private dining room during the tea-serving period. A Damiani representative will be on hand to present the collection, which exudes exclusivity and features some of the most extraordinary craftsmanship and skills seen today, thanks to Damiani’s stable of master jewelers and goldsmiths.
The high tea will be available every Saturday from April 1 to May 13, 2017 at Tosca at The Ritz-Carlton, Hong Kong. Drawing inspiration from the Mimosa Arlecchino collection, Fegato Grasso is an edible ruby ring made with foie gras terrine glazed in cherry syrup. A tribute to the Mimosa jewels, sweets in the Damiani afternoon tea are thoughtfully embellished with irregular rough surfaces. Coated with grated tonka beans and cocoa crumbles, the Alba Chocolate Truffle features the rich and dense flavor of 64% dark chocolate, which blends perfectly with the equally bold characters of black truffle paste filling. Apple Glass, Piedmontese Hazelnut and Spice Bread gracefully bring together apple jelly, caramelized apple cubes, hazelnut cream made with muscovado sugar hazelnut paste from Piedmont, and spiced bread in layers. Caprese Cake with Tea Cremeux is a traditional soft and moist Italian cake enhanced with tannic earl grey chocolate cream. Tomato Amaretti is filled with tomato orange oregano cream where tangy tomato confit is embedded in the center. Sun-dried tomato powder is infused in the cookie shell to give it an attractive bright color and tone down the overall sweetness. Sitting on a piece of crispy chocolate sable, the Tortino de Gianduja consists of a crunchy Gianduja crocant enclosed by soft Gianduja hazelnut chocolate cream. An exclusive collection of plates, leather jewelry trays and boxes is especially designed to serve the tea set, providing a setting and atmosphere to match the elegance and creativity both of Chef Pino’s menu and Damiani’s artistic designs.
