Among his must-try signatures is the Linguine with Red Prawn: “It is very important to use Sicilian red prawns for this recipe. I prepare the finest reduction made with the head and coral of the same prawn. Finally, it is best to use Sicilian cherry tomatoes for the sauce as they are sweet and bursting with flavour,” reveals Chef Andrea. A superb traditional recipe is the Slow Cooked Wagyu Beef Cheek with Barolo Red Wine Sauce on Mashed Pumpkin: “By slow cooking, the meat becomes extremely tender and juicy,” says Chef Andrea.
