HEC HOME ECONOMICS CENTRE RELEASES AUTHENTIC CLAYPOT DISH SERIES

吃一鍋熱騰騰的煲仔菜或煲仔飯,是香港秋冬常見的街頭寫照。說起煲仔料理,大家都會與大牌檔、茶餐廳、家常菜館或酒樓等連繫起來,正因「煲仔只應街上有」,家裡做的煲仔菜,不知怎的就是欠了一點點。但事實是否如此?

為了幫家常煲仔料理「討回公道」,港燈家政中心推出一系列煲仔料理課程,只要你家中煲仔常在,即可將地道風味的煲仔菜由路邊帶到家中廚房。

港燈家政中心煲仔料理系列特色
共設四個課程,均以傳統粵菜為骨幹,將教授多款配合時令及廣受歡迎的煲仔菜及煲仔飯配搭,並會示範火候控制,香脆鍋巴秘技及醬油調配,極富本地飲食文化特色。

(1) 入味煲仔飯烹飪實習課程
上課日期: 11月13日 (下午二時半至四時半)
學費: $250
導師示範: 臘腸雞腿煲仔飯
學生實習: 鳳爪排骨煲仔飯
導師: 林趙素玲女士
港燈家政中心駐場家政主任,擁有超過廿年教授中菜經驗,擅長粵式家常菜、潮式小吃及中式甜品。

(2) 「地道煲仔菜」烹飪示範課程
上課日期: 11月11、18及25日上課(下午二時半至四時)
學費: 每堂$106
菜式: 薑蔥蜆蚧雞煲、韭菜雞紅炸肚煲
鮮潤啫啫肉排煲、銀絲中蝦煲
蝦子生筋田雞煲、香芋油鴨煲。
導師: 林趙素玲女士

(3) 「時令煲仔菜」烹飪示範課程
上課日期: 11月25日、12月2日、9日、16日上課(下午六時半至八時)
學費: 全四講$400 / 單一堂 $110
菜式: 高纖椰香雞煲、原盅臘味蒸飯
醬肉海參煲、豆醬香芹沙蜢球煲
蒜豉金瓜海中寶煲、相思豆豬手煲
蜆蚧獅子魚球煲、肉骨大鱔煲
導師: 郭泳鐘師傅
具數年中菜製作經驗,擅長功夫菜,於港燈家政中心任教超過10年

(4) 中式煲仔飯精選
上課日期: 11月30日、12月7日、14日(下午二時半至四時)
學費: 全四講$300 / 單一堂 $110
菜式:   豉椒排骨煲仔飯、芹香魚鬆煲仔飯
北菇棉花雞焗飯、臘味肉餅煲仔飯
窩蛋牛肉飯、菜遠生筋雙菇煲仔飯
導師: 林趙素玲女士

  不要小看煲仔菜是平民美食,在選料方面其實也要下些功夫。其中不易變形變色的食材如肉類、海鮮及菇菌較易做,易出水的食材,如豆腐、瓜類等則宜先「走油」。

做煲仔飯不一定愈大火愈好味,電爐火力平均,能給米飯帶來穩定的熱力,更能炮製出金黃香脆、硬度適中的飯焦。
