QUARTERLY FOOD AND BEVERAGE HIGHLIGHTS AT HARBOUR GRAND HONG KONG

October 10, 2015 by StrawberrY Gal

As the cooler weather kicks in, Harbour Grand Hong Kong offers a wide range of comfort food with seasonal and exquisite menus at our five acclaimed restaurants to captivate your taste buds this fall.

Le 188˚ Restaurant & Lounge – Black Truffle & Beef Feast
Le 188° Restaurant & Lounge proudly presents the “Black Truffle and Beef Feast” in the coming winter. Being praised as “the Diamond of the Kitchen”, black truffle doesn’t look as decent as other precious ingredients. However, as cultivating truffles requires high standards on the environment and climate, the level of production is not huge thus the values of truffles are high. The aroma of high quality black truffles is unforgettable with just a single bite. A tiny amount of black truffle can make an ordinary dish extraordinary. Distinctive flavour and aroma of truffle pairs extremely well with meats, especially beef.

Our chef concocts delicacies by different beef cuts with black truffle. US Angus Beef Carpaccio & Black Truffle, made with traditional method and sided with commonly used ingredients of Italian cuisine, is a complete restoration of such traditional Italian dish. Chef’s recommendations also include Marinated US Angus Beef & Black Truffle. Marinated dishes are generally made of vegetables or seafood. To marinate beef, time control is undoubtedly important to strive for the balance in salty taste and freshness of meat to present this novel course. Honey Roasted Prime Short Rib & Black Truffle is a combination of different tastes.

Barbecuing with home-made barbecue sauce, the short rib is done with pleasant smell and soft texture. The dish is outweighing and overthrowing the usual perceptions on the extreme textures short ribs dishes used to be.

Kwan Cheuk Heen – Classic Shanghai Specialities
As the autumn breeze sets in, it’s the season reminding us of the old memories and our desire of heart-warming dishes intensifies. Executive Sous Chef, Wong Kam Ki, therefore has skillfully crafted a selection of classic Shanghai specialities for you to refresh the memories of yesteryear.

Try out the Braised Pork Belly with Sweet and Sour Sauce, one of the most representative Shanghai delicacies and full of childhood’s taste. With the bright red colour and alternative layers of fat and meat, the meat tastes tender and juicy, but not greasy. Each piece of the braised pork belly is wrapped with rich sauce which offers surprising taste. Chicken Soup with Fish Maw and Shrimps Dumplings in Clay Pot is another authentic Shanghai dish.

The chicken stock has been stewed for few hours. After adding the Jinhua ham, the whole dish is being sublimated and shrimps dumplings are infused with incredible flavour. Other highlights of the menu are Cold Chopped Kale and Bean Curd Rolls, Braised Chopped Pork Meatball and Deep-fried Mandarin Fish with Pine Nuts in Sweet and Sour Sauce.  What’s more? Selections of sizzling casseroles will be available to warm you up in this cool season.

Nagomi – Rockfish Set
Many people love Japanese cuisines but rockfish may still surprise them. Rockfish, also named as Simazoi in Japanese, is active along the rocky coast in the waters from Iwate Prefecture to Hokkaido. The brown body with distinctive stripes is also a characteristic of Rockfish. Every year-end is the harvest season of rockfish. With this perfect timing of both taste and texture, the delicate 7-course Rockfish Set will be presented at Nagomi including

Grilled Simazoi, sashimi, tempura, sushi, soup and, last but not least, the traditional Japanese seaweed-based agar jelly to put a perfect full stop on a sumptuous dinner.
