Chongqing is the birthplace of the hot pot in China.  At its core, Chongqing cuisine is seasonal food designed back in the day, to protect against the low temperatures and frigid winds of winter – hence the distinct and pungent flavours.  Chongqing dishes are spicier and have strong character in taste.  There is heavy use of chilli pepper, sesame, fermented black beans, scallions, ginger, garlic, soy sauce and an array of flavourings are used for over 40 different cooking methods.
