 Located on the 75th floor of Asia Pacific’s tallest building, Merdeka 118, Park Hyatt Kuala Lumpur unveils a new chapter in dining with the debut of Merdeka Grill, Cacao Mixology & Chocolate, and Park Lounge — three distinct venues that redefine the city’s culinary and social landscape, promising refined hospitality and a commitment to quality with spectacular views of the Kuala Lumpur skyline.
Merdeka Grill sets a new dining standard in Kuala Lumpur, combining world-class techniques with tableside artistry, featuring premium cuts, sustainable seafood, and locally sourced ingredients. To begin, guests can explore appetizers such as Nordic Vendace Roe with Red Onion, Crème Fraîche, Lemon, and Shokupan — a refined nod to Executive Chef Stig Drageide’s Norwegian heritage. From here, the dining journey continues with the restaurant’s signature dishes, which include Cedar-wood Roasted Salmon with Caviar and Smoke Butter Sauce and 7 Days Dry Aged Chateaubriand with Freshly Grated Wasabi, Sherry Vinegar Beef Jus with a selection of mustards prepared tableside, and Penang Vanilla Ice Cream crowned with Oscietra Caviar.

At Cacao Mixology & Chocolate, the art of chocolate takes center stage, where the complexity of cacao meets the craft of mixology and is set against the city’s shimmering skyline, underscored by the sway of bossa nova. From bean to glass, the venue celebrates the richness of cacao through chocolate-themed creations, small-batch distillery spirits, and zero-proof specialties that surprise and delight. Leading this innovative concept is Beverage Manager of Park Hyatt Kuala Lumpur, Lee Wei Lung, whose vision transforms the bar into a celebration of cacao’s versatility to captivate the cocktail-curious, seasoned connoisseurs, and mindful drinkers alike.
Cacao Mixology & Chocolate welcomes up to 75 guests into a design-forward space with tiered seating and soaring double-height, floor-to-ceiling windows. The highlight is Cacao’s signature 19kg house-made 70% Dark Chocolate block by Executive Pastry Chef Holger Deh, chiseled at the chocolate table in a ritual that turns cacao into a medium of discovery. Alongside are handcrafted selections of pralines, brittles, and truffles, creating the perfect backdrop for Instagram-worthy moments.

Park Lounge revives Malaysia’s long-lost recipes with care, offering an all-day dining experience that pays homage to heritage flavors. Taste traditional Malaysian dishes and other signature offerings created from the finest local produce. Serving breakfast, lunch, and dinner for 116 guests, Park Lounge highlights local flavors and recipes of Malaysia’s past, vegetarian-friendly offerings, and a refined, course-by-course afternoon tea. Signature highlights include Botok Ikan – a Sarawakian treasure of Spiced Mackerel steamed in banana leaf, fresh coconut, and wild leaves, Udang Kara Nyonya Laksa – a luxurious take on Nyonya laksa, served with whole lobster in a fragrant, spice-laden broth, Puff Pastry Lamb Biryani – a flavorful Spicy Lamb Shank with sides of mango chutney, dhal, and raita.

Afternoon Tea at Park Lounge is reimagined as a refined four-course journey, elegantly balancing savory and sweet creations. Each creation is crafted in-house, while a dessert trolley is wheeled gracefully to the table and presents an array of handcrafted confections, including vegan and vegetarian selections. The signature Mille Feuille, meticulously sliced tableside, adds a touch of theater to the experience. Guests are invited to accompany their selections with premium loose leaf teas, including Park Hyatt Kuala Lumpur’s exclusive blend of Rooibos Hibiscus, Orange Peel, and Mangosteen, together with other distinctive tea options and sparkling infusions. With live music drifting through the lounge, afternoons unfold at an unhurried pace, offering a quiet moment of indulgence in the heart of the city.
