The Heritage Series – The Legendary London Porker Arrives In Hong Kong | The Lounge & Bar

The Lounge & Bar at The Ritz-Carlton, Hong Kong is slated to entice meat lovers with waves of epicurean pleasures this summer. The Heritage series spotlights livestock of rare ancient breeds with little or no wastage of every cut on the menu.

Executive Chef Peter Find said, “Through re-introducing these historical varieties back to our plates, we hope to re-instill commercial value to these rare breeds and thus promote the farming business.” The special themed menu series begins with a four-course dinner featuring Middle White Pigs, available for two months only starting July 18, 2018.

Originating in 1852 in Yorkshire, England, the Middle White is a distinctive-looking pig with large pricked ears and squashed snout, which makes it favorable for outdoor grazing. The breed’s small size made it popular with London butchers and was therefore known as ‘The London Porker’. In the 1930s, Middle White was exported to Japan where it became highly fashionable even the Emperor was a fan. The trend unfortunately ended in the 1950s due to industrialization and the rising demand for leaner commercial pigs.

To help revive this historic breed, and preserve Britain’s rich edible biodiversity, Chef Peter has devised a tantalizing menu of authentic British favorites incorporating different cuts of the Middle White Pig. The meaty pleasures begin with “Homemade Pork Pie with Piccalilli” and “Scotch Egg” where pork cubes from the shoulder part, minced pork belly and trimmings of pig head synthesize bountiful textures in every bite. Crispy pork belly is used in “Leek and Potato Soup with Pork Belly” for a rich flavor. A clever balance of lean and fat meat from the pork belly, shoulder, leg and head in “Bangers and Mash” retains the juiciness of the pork sausage. “Roasted Pork Chop with Apple Purée” and “Shepherd’s Pie with Minced Pork” are also not to be missed. The dinner ends on a refreshing sweet note with “Strawberry Trifle”. For the full menus, please refer to the appendix.
