 DoubleTree by Hilton properties across Malaysia are proud to present a unique culinary odyssey with the launch of their inaugural seven chefs exchange program. This nationwide campaign, aptly named “Signatures Across the State: A Makan Kitchen Showcase,” brings together a diverse array of culinary talents, each chef infusing their unique flavors and skills to create an innovative dining experience. The event is set to run from June 1st to June 30th, inviting guests to partake in an exceptional gastronomic journey.

Celebrating Culinary Diversity

“Signatures Across the State” is not just a dining event; it is a celebration of Malaysia’s rich culinary heritage. Each DoubleTree by Hilton property will host a chef from another Makan Kitchen outlet, showcasing the best of regional cuisines. From Javanese Heritage to Nyonya Peranakan Cuisine, the event highlights the diversity of Malaysian food culture, bringing together traditional flavors with contemporary twists.

At the heart of this showcase is Makan Kitchen, renowned for its authentic Malaysian cuisine. Here, guests can witness culinary magic unfold in the restaurant’s open-kitchen concept, where skilled chefs prepare a variety of dishes that reflect the country’s diverse culinary landscape. The ambiance at Makan Kitchen is warm and welcoming, making it the perfect dining destination for families and corporate gatherings alike.

A Gastronomic Journey Through Malaysia

The journey begins at DoubleTree by Hilton Kuala Lumpur, where Chef Muhamad Khairi from DoubleTree by Hilton Putrajaya Lakeside brings the flavors of Javanese Heritage. His menu features traditional dishes such as Ayam Penyet, Bakso, Lamb Opor, and Nasi Ambeng. Known for his dedication to preserving the authenticity of Malay cuisine, Chef Khairi ensures that each dish remains true to its roots while incorporating fusion elements that add a unique twist.

Next, DoubleTree by Hilton Putrajaya Lakeside hosts Chef Zulkarnaen Suhaili from DoubleTree by Hilton Kuala Lumpur, who specializes in Borneo Cuisine. Chef Zulkarnaen, a distinguished Master Chef, presents a menu that highlights the rich flavors of Sabah and Sarawak, featuring dishes like Umai Ikan dan Latok, Kerabu Petai dan Rebung, and Laksa Sarawak. His expertise in Malay cuisine is evident in every bite, offering guests a taste of Borneo’s culinary heritage.

In Melaka, Chef Wilson bin Ibid from DoubleTree by Hilton Shah Alam i-City showcases the fusion of Indian and Borneo cuisines. His innovative menu includes Lamb Shank Banjaran Crocker, Tandoori Chicken Bambangan, and Scallop Umai. Chef Wilson’s passion for blending the essence of Indian cuisine with the unique flavors of Borneo creates a dining experience that is both exciting and satisfying.

DoubleTree by Hilton Johor Bahru offers a taste of Nyonya Cuisine by Chef Davian Foong from DoubleTree by Hilton Melaka. Chef Foong’s menu features classic dishes such as Otak Otak, Seabass with Nyonya Sauce, and Ayam Pongteh. His adventurous spirit and creativity shine through in his fusion dishes, catering to both traditional tastes and modern preferences.

At DoubleTree by Hilton Shah Alam i-City, Chef Jais bin Manan from DoubleTree by Hilton Johor Bahru presents Johorean Old Time Favourites. His menu, inspired by his culinary journey and mentorship under Malaysia’s beloved celebrity chef, Papa Joe, includes Ayam Goreng Bawang Wangi, Daging Masak Hitam, and Mee Rebus Johor Warisan. Chef Jais’s dedication to Malay cuisine and his innovative approach make his dishes a highlight of the showcase.

DoubleTree Resort by Hilton Penang features Chef Muhamad bin Muhidin from DoubleTree by Hilton Damai Laut Resort, who brings Perak Culinary Heritage to the table. His menu includes traditional favorites like Sup Kambing, Rendang Tok, and Ikan Masak Lemak Tempoyak. Chef Muhamad’s commitment to excellence and passion for cooking are evident in each meticulously prepared dish.

Finally, DoubleTree by Hilton Damai Laut Resort hosts Chef Hong Swee Aun from DoubleTree Resort by Hilton Penang, specializing in Nyonya Peranakan Cuisine. Chef Hong’s expertise in Penang’s heritage dishes is showcased in his menu, featuring Char Koey Teow Arang, Kapitan Chicken, and Asam Pedas Prawn. His creative presentations and deep understanding of Nyonya cuisine offer guests a delightful culinary experience.
