Sheraton Petaling Jaya Hotel Chef Table at 31 with Chef Brian Chong

 Sheraton Petaling Jaya Hotel invites guests to indulge in a unique culinary experience curated by Executive Chef Brian Bennet Chong at the Chef’s Table at 31, located in The Sheraton Club Lounge on the 31st floor. This dining experience pays homage to Malaysia’s culinary heritage while incorporating innovative techniques and sustainable home-grown produce.

Drawing inspiration from his East Malaysian ethnicity, Chef Brian showcases the finest produce from Sabah and Sarawak in his curated menu. For example, his take on the classic Cucur features a crabmeat and scallop croquette served with a Sarawak Laksa aioli. Guests can also enjoy dishes such as Corn Veloute made with Sweet Kudat Jagung Pulut and Wagyu Escalope brushed with Kelulut Honey, Sarawak Peppercorns, and Bone Marrow Butter.

Chef Brian’s menu highlights novel gastronomic techniques. The Lobster Mosaic, resembling a mosaic, consists of Shovelnose Lobster poached with kaffir lime, pandan, and ginger, served with an aniseed cream, bergamot, and chive emulsion. The Stone Grilled Mullet, marinated with Szechuan peppercorns, turmeric leaves, and calamansi, is served on hot river stones accompanied by a local kale kerabu.

To enhance the dining experience, Chef Brian has carefully selected Perrin Cotes du Rhone wines as pairings. The Perrin Cotes du Rhone Rosé complements the seafood appetizers with its citrus, red fruit, and delicate flower notes. The Perrin Cotes du Rhone Blanc pairs well with the Corn Veloute and Stone Grilled Mullet, offering hints of white flowers, buttercream, and apricots. The Perrin Cotes du Rhone Rouge, ideal for red meat and chocolate treats, is paired with the Wagyu Loin Escalope and 5 Textures of Chocolate.

The Chef’s Table at 31 with Chef Brian Bennet Chong will take place on June 2, 2023, at The Sheraton Club Lounge, Level 31. The dinner menu, including three pairings of Perrin Cotes du Rhone wines, is priced at RM312nett per person. Guests can purchase their seats on the Sheraton Petaling Jaya Hotel’s online store.
