The Murray, Hong Kong Celebrates the Blossoming Season with the Rhythm of Pink Cassia Afternoon Tea

 Every April and May are the blooming seasons of the famed Cassia Javanica var. Indochinensis – the Old and Valuable Tree (O.V.T.), standing in the front yard of The Murray, Hong Kong, a Niccolo Hotel. To celebrate this annual beauty event of nature, the hotel has specially crafted the “Rhythm of Pink” Cassia Afternoon Tea, available from 13 April to 31 May 2023, for guests to feast their eyes on, as well as to please the palate in the tranquility of indoor and outdoor space of Garden Lounge. Inspired by the 17-metre-tall majestic tree with pink and white pendulous blooms, the Cassia Afternoon Tea is a concerto of spring fruits and rosy ingredients presented in both appealing savoury and sweet forms.

 

The sensual journey begins with a welcome treat – Feta, Beetroot and Thyme Quiche. The mini quiche made with egg and thyme is infused with a herbal scent, matching well with the shaved feta cheese and beetroot powder on top.

 

The collection of exquisite sweet treats includes a fruity White Peach Compote & Raspberry Crème Tart, carrying complementary textures and flavours of homemade white peach compote and raspberry chocolate cream. The Ruby Chocolate Truffle Dome is a take on the classic truffle dome, with layers of chocolate truffle and sponge cake, coated in a crust of ruby chocolate. In the Sakura Strawberry Marmalade Shortcake Roll with Sakura Crunch, the luscious marmalade is mixed with crunchy sakura petals to offer natural floral notes that will surely tantalise the taste buds. Lychee & White Chocolate Mousse, Sable Breton is the contrast of flavours with refreshing lychee jelly, creamy white chocolate mousse and buttery Sable Breton. The edible flower petal and silver leaf on top add a classy touch.

 

The series of savoury delights include a Spicy Lobster & Shrimp Cassia Bun, Dill & Lemon. The bouncy diced lobster and shrimp meat is seasoned with a Korean spicy mayo sauce and complemented by a soft pink bun for surprising freshness. The Salmon & Dill Cream Cheese Roll, Keta Eggs presents a burst of umami with smoked salmon, salmon roe and cream cheese. Refreshing Crab & Lemongrass Tart combines fresh crab meat in mayo and a crunchy tart base for an ocean-sweet sensation. The Mortadella & Mascarpone Sandwich, with Pistachio Pesto, makes a delectable and fulfilling sandwich, decorated with pink cream-cheese and pistachios.

 

Cranberry Scones & Orange Blossom Scones are the must-have in an afternoon tea. Guests can enjoy them to their liking with the trio of Strawberry Jam, Lemon Curd and Clotted Cream. Guests can also head to the confectionery table for more pastries, assorted cookies and tea cakes.

 

Spring’s gentle sun has awakened the soul of our dearest friend, O.V.T.. Guests are invited to appreciate its thriving flower power which will gladden everyone’s heart.

 

Upon any patronage of the “Rhythm of Pink” Cassia Afternoon Tea from 13 April to 11 May 2023, guests can top up for two scoops of Venchi gelato at a special price of HKD 50. Flavours ranging from 75% Chocoviar, Vanilla, Strawberry to Pistachio.
