
Perigord, a southwestern region of France, is reputable for producing the finest black truffles. Also known as the “Diamonds of Perigord”, they are famed for their exquisite aroma and earthy flavour reminiscent of a rich chocolate. With the best season running from December to March each year, Hugo’s Executive Sous Chef Josef Gallenberger is presenting a special menu featuring different Perigord black truffle pairings to impress all epicureans this winter.

Savour the Pan-fried Canadian Scallop with Perigord Truffle, herb emulsion, cauliflower, cream, frisee and salmon caviar, in which the soft creamy texture of the scallops and the strong aroma of the black truffle create an interesting contrast to the dish, while the colourful presentation is set to delight diners’ appetites at the kick-start the meal.
For the intensive flavours of the ocean, dive into the Canadian Sea Urchin Cocktail with Perigord Truffle, romaine lettuce, crème fraîche, white wine, tomato and pine nuts. The Canadian sea urchin has a delicate texture and a full-bodied taste, and is perfectly complemented by the Perigord black truffle’s aroma for robust flavours.
Diners should not miss out on Chef’s recommendation, the US Prime Beef Tenderloin Rossini with
French Foie Gras and Perigord Truffle, a classic French recipe combining a succulent cut of steak with buttery foie gras, and served with celeriac and truffle mash, glazed carrots, asparagus and port wine jus.
The dish is prepared using Hugo’s signature table-side flaming service by Chef, adding to the “wow” factor. Equally tantalising is the Handcrafted Tagliatelle with Perigord Truffle, spinach, butter and white wine.
Freshly crafted by the culinary team with truffle slices, the delectable pasta has a springy texture and is a true joy to the senses.
The Perigord Black Truffle menu is available at Hugo’s from 1 December 2019 to 29 February 2020.
