THE RITZ-CARLTON, HONG KONG LAUNCHES SUGARFINA® SWEET SPRING AFTERNOON TEA AT CAFÉ 103

The Ritz-Carlton, Hong Kong collaborates with Sugarfina® to launch an afternoon tea set inspired by the luxury confections brand’s signature sweets.

From April 15-June 30, the tantalizing Sugarfina® afternoon tea set will be available at Café 103. Inspired by Sugarfina®’s exquisite candies, executive pastry chef Richard Long and his team created a set of six desserts and four savory bites that will please both your palate and your eye.

Sugarfina®’s iconic cocktail candy collection is reinterpreted in the afternoon tea set. The Dom Pérignon Vintage Champagne Bears®, for example, is featured in the Champagne Bears® cup. The cup is layered with Champagne panna cotta and topped with Champagne jelly and refreshing honey, lime and strawberry confit to strike the perfect balance in flavor profiles.

The brand’s signature flamingo motif landed on the chocolate art on the Pink Flamingos featuring pink grapefruit jelly and vanilla mousse. Crispy crumbles add an additional layer to the decadent dessert.

Chef Richard puts a tongue-in-cheek spin on Sugarfina®’s gummy for the Raspberry Cream Cones. The colorful mini waffle cone is filled with raspberry jam and vanilla cream and topped with an ice cream cone gummy for garnish.

Highlights of the savory items include the Vanilla Champagne Blue Crab & Caviar with Brioche Bun and the Baked Wild Mushroom with Truffle Onion Vol Au Vent. The brioche bun made with squid ink is paired with flavorful blue crab chutney infused with vanilla and champagne dressing and caviar. Indulge your palates with the delectable Vol Au Vent pastry baked to perfection and filled with wild mushroom and black truffle.

Guests who order the Sugarfina® Sweet Spring Afternoon Tea will be gifted a voucher to redeem a complimentary soft serve ice cream or a special drink at any Sugarfina boutique in Hong Kong.
