Italian Michelin-starred Guest Chef Igor Macchia Returns to Cucina for Three Days Only

Cucina is delighted to announce the return of acclaimed Italian Michelin-starred Chef Igor Macchia for three days only, from 10 to 12 August 2018. His menu will showcase exciting new renditions of classic Italian favourites elevated with impressive culinary techniques.

Having worked in Michelin-starred restaurants since the age of 20, Chef Igor is an expert in lavish culinary procedures. From one of Switzerland’s most famous restaurants, one Michelin-starred Restaurant du Lion d’Or, and London’s two Michelin-starred Restaurant le Gavroche, to Brussels’ three Michelin-starred Restaurant Bruneau, Chef Igor has a professional track record that culinary enthusiasts can only dream about experiencing. Along the way, the honourable likes of Michel Roux and Jean Pierre Bruneau held the title as mentor to the young Michelin-starred chef.

Highlights from his 4-course tasting dinner menu include a starter of Warm Salmon Fillet with Smoked Mayonnaise, Miso and Sesame. The Norwegian salmon is very slightly steamed in order to retain the freshness and soft texture, with added complexity from the smoked mayonnaise and miso for an Asian touch. Saffron Risotto with Burrata, Pan-Fried Langoustine and Coffee Powder is a traditional Milanese dish with a modern twist from the addition of burrata cheese and New Zealand langoustine. The burrata gives the dish a creamy taste, while saffron complements the freshness and sweetness of the langoustine. A main course of Kingfish with Salad Soup, Vegetables, Capers and Olives highlights steamed yellowtail from Japan. Light, juicy and refreshing, it is ideal for summertime dining.

To complete an evening of gastronomic mastery, Chef Igor’s Tiramisu deconstructs the classic tiramisu and presents each ingredient separately. Milk mousse is used instead of mascarpone cheese for a lighter taste, while the sponge cake adds texture, paired with coffee ice cream, hazelnut crumble and chocolate flakes, creating an impeccable ending.

It has been three years since Chef Igor’s last return to Cucina and he brings with him exciting new renditions of classic Italian favourites as well as culinary techniques unseen in the Hong Kong food scene. From 10 to 12 August 2018, a 4-course tasting dinner menu at HK$888 per person (additional HK$550 per person with wine pairing) will be available alongside an a la carte menu during lunch and dinner periods. Selected dishes from Chef Igor’s a la carte menu will also be presented on Cucina’s lunch and weekend brunch menus. For enquiries or reservations, please call 2113 0808.
