Tosca Welcomes Guest Chef Anthony Genovese of Michelin Two-Star Il Pagliaccio

April 12, 2018 by StrawberrY Gal

Michelin-starred Chef Pino Lavarra proudly welcomes guest chef, Anthony Genovese, to Tosca, for a limited time only from April 19 to 21, 2018.

Chef Anthony Genovese’s origins are deeply rooted in the sunbaked mountains and dramatic coastline of Calabria in southwest Italy. His culinary career has taken him through countries and continents including England, Japan, Malaysia and Thailand. Time in Malaysia and Thailand opened Chef Anthony’s mind and palate to an eclectic range of spices, while Japan gave him dexterity in food plating, presentation and a deep respect for produce. This Asian culinary education proved a great influence in building his own inspirational and contemporary style in the kitchen and to the table without losing his respect for his Italian roots. Chef Anthony then returned to Italy in 1997 to take up the role of Head Chef at Rossellinis Restaurant at the Hotel Palazzo Sasso, in Ravello. It was here that this talented chef was awarded his first Michelin star.

In 2003, the turning point came when Chef Anthony opened Il Pagliaccio in the heart of Rome, where he takes Italian fine dining into a new era with subtle Asian influences. Inspired by Chef Anthony’s travels around Asia, but still firmly grounded on his southern Italian heritage, the menu is a celebration of the finest produce and ingredients. In just three years, he received his second Michelin Star.

During his time at Tosca, Chef Anthony will showcase a medley of Italian favorites to the delight of all avid gourmands. Priced at HK$2,280 for six courses, the dinner menus offer indescribable sensations of Chef Anthony’s innovative classics. For guests looking for a midday indulgence, the lunch menus from HK$780 are a perfect remedy to get them through a busy day. Dishes of special note include “Sea Scallops, Radicchio and Pomegranate,” “Risotto, Bitter Butter and Chicken Combs,” and “Fondant: Chocolate, Cassis, Beetroot and Eucalyptus.” For the full menus, please refer to the appendix.
